Ingredients for the Blackberry Filling

Berry Filling Ingredients:
Fresh or Frozen blackberries
Cane Sugar
Lemon Zest
Chia Seeds
Water

Crust and Crumble Ingredients:
Oat Flour
Rolled Oats
Baking Powder
Salt
Unsweetened Applesauce
Cane Sugar
Coconut Oil
Vanilla Extract

Preheat oven to 350 F.

Preparing the Berry Filling:

Combine all the berry-filling ingredients in a medium saucepan. Heat over medium-high heat, stirring regularly, until bubbles form around the edge of the pot. Mash the berries with a fork and cook for 7-8 minutes until it thickens. Continue to stir to avoid burning. Set the filling aside to cook while preparing the crust and crumble.

Preparing the Crust and Crumble:

Combine oats, oat flour, baking powder, salt, and sugar in a bowl. Add in oil, applesauce, and vanilla. Mix well until all ingredients are combined. Place 3/4 of the mix into a greased 8×8 pan. Bake crust for 10 minutes.

After baking the crust, pour the cooled berry filling over the crust and spread out evenly. Crumble the remaining crust and mix over the berry filling. Then, we will place in the oven and bake for 30-35 minutes.

Homemade Oatmeal Bars with Blackberries

  • 8×8 Square Pan
  • Medium Sauce Pan
  • Large Mixing Bowl
  • Flat Airtight Storage Container

Ingredients

Berry Filling

  • 3 cups fresh or frozen blackberries
  • 1/3 cup cane sugar
  • 1 lemon zest
  • 3 tbsp chia seeds
  • 2 tbsp water

Crust and Crumble Mix

  • 1 1/2 cups oat flour
  • 2 cups rolled oats
  • 2 tsp baking powder
  • 2 tsp salt
  • 1 cup unsweetened applesauce
  • 1/3 cup cane sugar
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract

Instructions

  • Preheat oven to 350 F.

Berry Filling

  • Combine blackberries, sugar, lemon zest, chia seeds, and water together in a medium saucepan.
  • Over medium-high heat, consistently stir until bubbles form around the sides of the pan.
  • Mash the berries with a fork, cooking for an additional 7-8 minutes until the filling thickens. Continue stirring to prevent the filling from burning.
  • Set the filling aside to cool.

Crust and Crumble

  • Combine oats, oat flour, baking powder, salt, and sugar together in a bowl.
  • Add oil, applesauce, and vanilla.
  • Mix well until all ingreidents are combined.
  • Take 3/4 of the crust (and crumble) mixture and press down into a greased 8×8 square pan.
  • Bake crust for 10 minutes.

Assembling the Oatmeal Bars

  • After baking the crust, pour the cooled berry filling over the crust. Spread it out evenly throughout the pan.
  • Crumble the remaining crust (and crumble) mixture over the jelly filling.
  • Bake for 30-35 minutes at 350 F.
  • Let bars cool before cutting.

Notes

  • Cut bars into 16 small bars (2 per serving) or 8 larger bars (1 per serving).
  • Store oatmeal bars in an airtight container in the refrigerator for up to one week.
