Berry Filling
Combine blackberries, sugar, lemon zest, chia seeds, and water together in a medium saucepan.
Over medium-high heat, consistently stir until bubbles form around the sides of the pan.
Mash the berries with a fork, cooking for an additional 7-8 minutes until the filling thickens. Continue stirring to prevent the filling from burning.
Set the filling aside to cool.
Crust and Crumble
Combine oats, oat flour, baking powder, salt, and sugar together in a bowl.
Add oil, applesauce, and vanilla.
Mix well until all ingreidents are combined.
Take 3/4 of the crust (and crumble) mixture and press down into a greased 8x8 square pan.
Bake crust for 10 minutes.
Assembling the Oatmeal Bars
After baking the crust, pour the cooled berry filling over the crust. Spread it out evenly throughout the pan.
Crumble the remaining crust (and crumble) mixture over the jelly filling.
Bake for 30-35 minutes at 350 F.
Let bars cool before cutting.
