- 1 1/2 cups oat flour
- 2 cups rolled oats
- 2 tsp baking powder
- 2 tsp salt
- 1 cup unsweetened applesauce
- 1/3 cup cane sugar
- 1/4 cup coconut oil, melted
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350 F.
Berry Filling
- Combine blackberries, sugar, lemon zest, chia seeds, and water together in a medium saucepan.
- Over medium-high heat, consistently stir until bubbles form around the sides of the pan.
- Mash the berries with a fork, cooking for an additional 7-8 minutes until the filling thickens. Continue stirring to prevent the filling from burning.
- Set the filling aside to cool.
Crust and Crumble
- Combine oats, oat flour, baking powder, salt, and sugar together in a bowl.
- Add oil, applesauce, and vanilla.
- Mix well until all ingreidents are combined.
- Take 3/4 of the crust (and crumble) mixture and press down into a greased 8×8 square pan.
- Bake crust for 10 minutes.

- After baking the crust, pour the cooled berry filling over the crust. Spread it out evenly throughout the pan.
- Crumble the remaining crust (and crumble) mixture over the jelly filling.
- Bake for 30-35 minutes at 350 F.
