Pasta.  It’s a weakness.  I love Italian food, which seems to consist of a lot of pasta.  Stuffed Shells, Lasagna Rolls, Beef Stroganoff over Egg Noodles and so much more.  What is your favorite pasta dish?  Today I thought I’m sharing a Simply and Hearty Minestrone Pasta Salad. Not only is this salad terrific served with grilled chicken, beef or shrimp, it also makes a hearty meal!

If you like minestrone soup, you’re sure to love this dish! With the warmer weather rolling in and grilling season upon us, doesn’t a pasta salad sound like the perfect dish to add to the menu?  I remember a pasta salad my mom used to make and it brings back memories of family picnics and church gatherings.  Isn’t it funny how food triggers memories and emotions?  Memories and emotions that will always be close to my heart!

This dish might be new favorite around our house.  The hubs devoured it — and I hope you’ll think it’s as yummy as we do!

Simple and Hearty Minestrone Pasta

Ingredients

  • 3 cups uncooked medium pasta shells 7.5 oz
  • 2/3 cup Italian dressing
  • 1/2 cup shredded Parmesan cheese
  • 1 cup sliced carrots
  • 1 cup chopped green bell pepper
  • 1 can 15 or 16 oz kidney beans, rinsed and drained
  • 1 can 15 or 15 oz garbanzo beans, rinsed and drained
  • 1 can 14-1/2 oz Italian-style stewed or diced tomatoes, drained

Instructions

  • Cook and drain pasta as directed on the package. Toss pasta and remaining ingredients. Serve warm or cold.
