Skinny Beef Stroganoff

Skinny Beef Stroganoff:  A simple, delicious and lighter twist to a classic dish!

A delicious and light Beef Stroganoff with livelaughrowe.comYears ago I was re-introduced to my love for Beef Stroganoff.  I was on Weight Watchers (WW) at the time and came across this incredible Beef Stroganoff recipe that literally made my mouth water.  That’s one of the things I love about WW, I never feel deprived.  I’m not being paid to say that either.  I don’t eat a lot of beef either, but this dish keeps a pound in the freezer at all times {giggle}.  This is a dish I’ve continued to make even when I wasn’t dieting or counting points.  Even better? The hubs loves it too.  It’s a healthier version of comfort food that leaves you coming back for more!

I’ve shared a few skinny dishes with you in the past — like the Spinach Lasagna Rolls.  I’m hoping to share more with you this year as I journey to a healthier weight.  Today, I hope you enjoy this Skinny Beef Stroganoff.  I’m getting hungry just sharing it with you!

Skinny Beef Stroganoff

Total Time 20 minutes
Servings 5 Servings

Ingredients

  • 8 ounces no-yolk egg noodles uncooked
  • 1 pound 95% lean ground beef
  • 1 cup chopped onion
  • 8 oz. fresh mushrooms sliced
  • 12 oz jar beef gravy
  • 8 oz. fat free sour cream
  • 1/4 tsp garlic salt
  • 1/4 tsp black pepper

Instructions

  • Prepare noodles according to package directions, omitting salt and oil.
  • While noodles cook, place beef, onions and mushrooms in a large nonstick skillet, cooking until meat is browned. Stirring until beef crumbles. Drain meat.
  • Return meat to skillet. Add gravy, sour cream, garlic salt and pepper. Stir well.
  • Cook over medium heat 5 minutes or until thoroughly heated.
  • Serve over drained noodles, top with fresh ground pepper.

    Yum! My husband LOVES beef strog, but I rarely make it since we’re trying to eat healthier. I’ll have to try out the recipe!
