I promised myself that in the new year I would try my hand at more sheet pan recipes and instant pot recipes. Well, a month has come and gone and I recently made a sheet pan recipe. This Mini Meatloaf Dinner was amazing!
Mini Meatloaf Sheet Pan Recipe
If there is one thing I know for fact, it’s that I still feel like a novice in the kitchen. I love trying new recipes, but within certain boundaries. Hee-hee. I’m not a fancy, over complicated cook — it’s not realistic to me.
And, if I had to be honest, some days I’m just too lazy to cook and I’m a terrible meal planner. I guess you could say I’ve been trying a different form of meal planning. I like to just pick 4-5 recipes and get all the ingredients to have on-hand. That seems to give us options, but nothing too regimented. It seems to be working too. Yay!
This mini meatloaf sheet pan recipe caught my eye in a diabetic publication and like I mentioned earlier, I really wanted to give these one pan recipes a try. Since we don’t eat a lot of beef, I was excited to make this meatloaf dish. I tweaked a few things and crossed my fingers as I placed into the oven.
The real test of success for a recipe is getting my husbands approval. We both agreed this was a great dish! The meatloaf has amazing flavor, so I’m certain you won’t be disappointed.
Mini Meatloaf Sheet Pan Dinner
Ingredients
Meatloaf
- 1 egg lightly beaten
- 1/4 cup shredded carrot
- 1/4 cup finely chopped onion
- 3 tbsp. ketchup
- 1 tsp. yellow mustard
- 1 tsp. Worcestershire sauce
- 1 clove garlic minced
- 1 lb. extra-lean ground beef
Meatloaf Sauce
- 1/4 cup ketchup
- 2 tbsp. packed brown sugar
- 1 tsp. yellow mustard
Potatoes and Seasoning
Green Beans
- 8 oz fresh green beans, trimmed
Instructions
- Preheat oven to 350º F. Grease 13x9-inch baking sheet (or line with foil).
- In a large bowl combine the first eight ingredients, through garlic. Add ground beef, mix well. Shape mixture into four round loaves and place on one half of the baking sheet.
- In a small bowl combine the ketchup, brown sugar and yellow mustard; spread over meatloaves.
- Wash and dry large bowl. Combine the potato seasoning ingredients. Toss to coat. Place in the other half of the prepared pan.
- Bake 40-45 minutes or until meatloaves are done and potatoes are tender. Add green beans after 20 minutes.
Nutrition
For this recipe, I used a 9×13 cookie sheet (with a lip). It was the perfect size and cleaned up very well — even without using foil.

Kelly – this looks great! I want to give it a try. You have shown a lovely presentation and given complete instructions. Thank you! Have 5-6 meal ingredients on hand work best for me also. I hate cooking. If I am going to cook, I prepare everything early morning ready to go in the oven. I like oven meals! I will buy the large pack of fresh green beans and cook them on top of the stove with a strip of bacon. I will have enough green beans for a couple of meals during this 5-6 meal plan. They keep well and I like them with additional flavor.
