No-Bake Candied Pecans
We’re approaching the time of the year when we bake lots of cookies, make lots of snacks and probably gain few extra pounds. Yep, it’s time to pull out our stretchy pants… And you know what? It’s worth it {giggle}.
It’s almost impossible not to treat yourself to all of the yummy goodness that comes with the season. Right? I doubled this recipe recently (3 pounds of candied pecans) and they didn’t last long. Gulp! I kept hearing my husband grab a handful as he would say, “these are so good.”
Not everyone can enjoy pecans due to allergies or a dislike for nuts; however, if that’s you — there are alternative uses for this recipe. A batch of these would make perfect favors at your holiday gathering. Keep them on-hand for a quick snack in your candy dish — or a fabulous sweet treat for a friend (aka a gift).
Simply place in a jar or treat bag and tie with some ribbon. Yep, it’s that simple!
If my memory serves me correctly, one of our college friends introduced this recipe to my sister and I. It’s become a household favorite! And did I mention a wee-bit addictive?

Instructions
- Combine the first five ingredients over medium heat until the sugar dissolves. Add pecans and stir. With a slotted spoon, remove the pecans from the pan and place on wax paper until dry.

Yum! Just made them. I doubled the vanilla and cinnamon. Added 1/2 tsp + Cayenne pepper for a little kick. Used 4 cups of
peacans.

The flavor is amazing but I must have done something wrong . . . they are not drying out very easily. Perhaps because it’s humid here in Florida? I made them about three hours ago and they are still very sticky. If I put them in a jar, they are going to clump. Ideas for where I went wrong?

Hi Gaye. Well, that’s a shame. I’ve never experienced them not drying to a crunch. Maybe it is the humidity. You could always try to bake them dry; just keep a close eye on them so they don’t burn. If they’re not dry, I definitely wouldn’t put them in a jar — they will most likely all stick together. I wish I could be of more help.
