It is no secret that I absolutely LOVE breakfast foods. Over the last few years, I feel like we eat a lot more breakfast food than usual.. and sometimes we enjoy it for dinner too! Yep, breakfast for dinner… for the win!
Have you ever just woken up on a Saturday morning and craved a piece of warm coffee cake to enjoy with your cup of coffee? Please tell me I’m not alone here (haha!) Well, if you’ve had these cravings, you know what comes next. Getting up and making an all-time favorite, Bisquick Coffee Cake.
Simple Coffee Cake Recipe
Every time I make this recipe, I’m flooded with memories of when my sister and I were roomies back in the day (here in Springfield, MO). We made this coffee cake on more Saturday mornings than I can remember. It’s probably safe to say it was a weekend roomie tradition. Haha!
I actually get a little sentimental when I think about the silly things the two of us did. Late nights where we decided to whip up chocolate chip cookie dough to stand in the kitchen eating it raw by the spoonfuls as we talked about life, jobs, boys, etc.
Grabbing Chinese food on a Friday night to stay in and watch a movie. I love my sister and I wouldn’t trade those memories for anything! This post is for you, Kristine! Thanks for the memories, I hope you enjoy the walk down memory lane. Gigantic Hugs!
Ready for the recipe? This used to be on the back of the Bisquick box years ago. Thankfully I’m a recipe hoarder, so I’ve had this in my good ole’ recipe box for many years. Enjoy!
Bisquick Coffee Cake
Ingredients
Cake
- 2 cups Bisquick
- 2/3 cup water or milk
- 1 egg
- 2 tablespoons sugar
Streusel
- 1/3 cup Bisquick
- 1/3 cup brown sugar, packed
- 1/4 teaspoon ground cinnamon
- 2 tablespoons butter
Instructions
- Preheat oven to 375 degrees.
- Grease an 8"x8" or 9"x9" square (or round) baking dish.
- Mix cake ingredients and pour in baking dish.
- Mix streusel ingredients with a fork or pastry mixer until crumbly.
- Spread topping mix over cake mixture.
- Bake for 25 minutes.

Girl, I STILL make this coffee cake at least once a month. One of my all time faves from childhood. Sometimes I double the streussel and work it into the batter. (OMG – delish!) But most of the time, I just add a little vanilla and cinnamon to the batter for an extra punch. Now I want some! =)

Yummy! So sweet that you have such precious memories of the time spent as a roomie with your sister. And in my neck of the woods, too. I am not far from Springfield. Great little city. (Little compared to a big city, huge compared to my tiny town). I think the absolute perfect light breakfast is coffeecake and a couple pots of coffee.

I was looking for a few ingredient breakfast cake recipe that would be quick and tasty; this one did it for me.
Next time I may add a little more sugar but as the recipe stands, it is a delicious cake: not heavy and perfect with that first cup of coffee.
I was able to tip-toe around the apartment while everyone was sleeping (at 5:30 AM) and I put this together without making a sound!!! My little girl woke up and squealed, “Daddy when did you make THIS???” (LOL!!)

Yes fond memories! Rare moments when we ran outta cold cereal, mom a full time nurse and evening classes, would bake us the coffee cake, fast forward as an adult, we had a meeting and the cooks prepared breakfast, I ate the coffee cake and I could have cried, I searched for this recipe for at least 4 years, back then we didn’t have the internet, I went to libraries, my mother in law came to visit us, she prepared the Chicken and Dumplings, and I saw the pic of the coffee cake and remembered Mom always had a box of Bisquick, I found my recipe! I now make occasionally in the 35 years I’ve had this recipe, it’s no longer on the box, so now I Google the recipe. One is on the oven now.
