Ingredients

  • 1 cup quinoa, cooked
  • 1/2 red onion, chopped
  • 1 cup black beans, cooked
  • 3/4 cup corn kernels cooked, canned or thawed
  • 1 cup tomato, diced
  • 1/3 cup cilantro, chopped
  • 1 avocado, diced
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • salt and pepper to taste

Instructions

  • In a bowl, stir the quinoa and red onion. Marinate for approximately 5 minutes, allowing the quinoa to immerse in the onion flavor.
  • Add the black beans, corn kernels, and tomato. Stir to incorporate.
  • Add the avocado, cilantro, olive oil, lemon juice, salt and pepper. Stir again.
  • Allow to set for 10-15 minutes before serving it.

Notes

This Mexican Quinoa Salad only lasts 2 days in the fridge in an airtight container due to the avocado. However, if you leave out the avocado and add it when eating, you can store the salad for up to 4 days.
