Did somebody say Taco Tuesday? Stuffed with flavorful salsa chicken and topped with fresh vegetables and cheese, these Easy Chicken Tacos (Shredded Chicken Tacos) are sure to become a regular in the weekly meal rotation.
A couple of weeks ago, I shared my 3-Ingredient Slow Cooker Salsa Chicken. That shredded chicken is a key ingredient to these Easy Shredded Chicken Tacos.
Experimenting a bit more in the kitchen lately, I was hopeful these tacos would be a hit. So, you can imagine my excitement when these chicken tacos turned into the best chicken tacos in my house! Consequently, everyone loved them and agreed that they were packed with flavor.
While growing up, we had tacos every so often and my mom made a mean homemade soft taco. As a result, homemade soft tacos are a treat; however, todays crockpot chicken tacos were served on hard tacos. Ever have a craving for hard tacos? I do. Weird, right? Maybe it’s just a big fat crush on Mexican food (hee-hee).
An officially craving is setting in, so let’s take a look at the recipe.
Shredded Chicken Tacos
- 2 lbs. Boneless Skinless Chicken Breast
- 1 Jar Salsa
- ½ Package Taco Seasoning
- Package of Hard Tacos
- 1 Avocado chopped
- Cilantro chopped
- Pico de Gallo
- Shredded Cheese
- 8 oz. Sour Cream
- 1 Lime sliced into wedges
- Place chicken, salsa and seasoning in crockpot.
- Cook on low 4-6 hours or until it shreds.
- Spread a thin layer of sour cream on taco.
- Add pico de gallo, avocado, cilantro, and shredded cheese.
- Serve with slices of lime for squeezing over taco for additional flavor.
