It’s been a very long time since I’ve hosted a brunch! I remember one that a friend of mine (Yvonne Marsh) hosted for a Southern Living at Home (SLAH) party years ago. She made a mean breakfast casserole. I think I found a new love for brunches that day. Along with the casseroles, fruit plates and muffins — it’s also nice to serve mimosas or a sparkling wine. Wouldn’t you agree? I thought I would share one of my favorite brunch dishes, Hash Brown Casserole, paired with Freixenet sparkling wines.
Let’s start with this creamy Hash Brown Casserole, it’s simple and delicious.
Hash Brown Casserole
Ingredients
- 2 cans 10.75 oz Condensed Cream of Chicken Soup
- 2 cups 16 oz Sour Cream
- 1 stick of Butter divided
- 2 Tbsp. Dried Minced Onion Flakes
- Black Pepper to taste
- 2 lbs. Shredded Hashbrowns thawed
- 8 oz. Extra Sharp Shredded Cheddar Cheese
- 1 cup crushed Cornflakes
Instructions
- Preheat oven to 350. Lightly grease 2 to 2.5 quart baking dish.
- In a large bowl, mix the soup, sour cream, 4 Tbsp. butter, dried onion flakes, and pepper.
- Stir in the hash browns and half of the cheese. Pour into the baking dish.
- Sprinkle with remaining cheese and top with crushed cornflakes.
- Pour remaining butter (melted) over the casserole.
- Bake 45 minutes or until cheese is melted and bubbly.
