It’s been a very long time since I’ve hosted a brunch!  I remember one that a friend of mine (Yvonne Marsh) hosted for a Southern Living at Home (SLAH) party years ago.  She made a mean breakfast casserole.  I think I found a new love for brunches that day.  Along with the casseroles, fruit plates and muffins — it’s also nice to serve mimosas or a sparkling wine.  Wouldn’t you agree?  I thought I would share one of my favorite brunch dishes, Hash Brown Casserole, paired with Freixenet sparkling wines.

Hash Brown Casserole

Ingredients

  • 2 cans 10.75 oz Condensed Cream of Chicken Soup
  • 2 cups 16 oz Sour Cream
  • 1 stick of Butter divided
  • 2 Tbsp. Dried Minced Onion Flakes
  • Black Pepper to taste
  • 2 lbs. Shredded Hashbrowns thawed
  • 8 oz. Extra Sharp Shredded Cheddar Cheese
  • 1 cup crushed Cornflakes

Instructions

  • Preheat oven to 350. Lightly grease 2 to 2.5 quart baking dish.
  • In a large bowl, mix the soup, sour cream, 4 Tbsp. butter, dried onion flakes, and pepper.
  • Stir in the hash browns and half of the cheese. Pour into the baking dish.
  • Sprinkle with remaining cheese and top with crushed cornflakes.
  • Pour remaining butter (melted) over the casserole.
  • Bake 45 minutes or until cheese is melted and bubbly.
