It’s been a very long time since I’ve hosted a brunch! I remember one that a friend of mine (Yvonne Marsh) hosted for a Southern Living at Home (SLAH) party years ago. She made a mean breakfast casserole. I think I found a new love for brunches that day. Along with the casseroles, fruit plates and muffins — it’s also nice to serve mimosas or a sparkling wine. Wouldn’t you agree? I thought I would share one of my favorite brunch dishes, Hash Brown Casserole, paired with Freixenet sparkling wines.
Let’s start with this creamy Hash Brown Casserole, it’s simple and delicious.
Hash Brown Casserole
- 2 cans 10.75 oz Condensed Cream of Chicken Soup
- 2 cups 16 oz Sour Cream
- 1 stick of Butter divided
- 2 Tbsp. Dried Minced Onion Flakes
- Black Pepper to taste
- 2 lbs. Shredded Hashbrowns thawed
- 8 oz. Extra Sharp Shredded Cheddar Cheese
- 1 cup crushed Cornflakes
Preheat oven to 350. Lightly grease 2 to 2.5 quart baking dish.
In a large bowl, mix the soup, sour cream, 4 Tbsp. butter, dried onion flakes, and pepper.
Stir in the hash browns and half of the cheese. Pour into the baking dish.
Sprinkle with remaining cheese and top with crushed cornflakes.
Pour remaining butter (melted) over the casserole.
Bake 45 minutes or until cheese is melted and bubbly.
Now, imagine that being served at a yummy brunch, paired with Freixenet (pronounced “fresh-eh-net”) Sparkling Wine.
We tried both the Cordon Negro Bruth and the Cordon Negro Sweet Cuvée.
The Cordon Negro Brut is Freixenet’s most popular cava, often referred to as the “Black Bottle Bubbly.” It is the #1 imported sparkling wine in the world and still ideal for any occasion. Cordon Negro Sweet Cuvée, is their first line extension of the Black Bottle Bubblies in 20 years – something they are very excited about. This sparkling wine is for those that enjoy the sweeter things in life and happens to be my favorite. #nomnomnom On the palate it’s fruity with a silky sweet finish! I loved it.
The proof, as they say, is in the bottle: today, the most often popped corks in the world say “Freixenet.” Freixenet is available nationwide in restaurants, wine stores and grocery stores as common as Whole Foods, Trader Joes and Publix! Suggested retail value is only $12 too.
So, who is ready to host a brunch? With a creamy Hash Brown Casserole, Chocolate Chip Muffins, Blueberry Muffins and Freixenet Sparkling wines you’re sure to feed the senses!
