As the warmer hot temperatures roll in, it’s time to fire up the grill. Putting the oven on in the summer is not ideal, but grilling is a win-win. Likewise, it makes a great recipe for camping too — it can be done on a portable grill. You can never go wrong with options, right?
Now that we have a camper, it’s nice to know that some of these recipes can join us on the road. Ya know?
How long do you grill chicken thighs?
Grilled chicken thighs are pretty easy to make. You’re going to grill them hot and fast on medium-high. And once you’ve placed the chicken thighs on the grill, you’ll grill them for about 5-7 minutes per side, or until the internal temperature in the thickest part of the meat reaches 165º Fahrenheit.
Let’s make these thighs… and start with the marinade.
Peach Barbecue Marinade:
3/4 cup barbecue sauce
4 tablespoons peach preserve
1-1/2 tablespoon lemon juice
Salt and Pepper, to taste
Trim the fat from all of the chicken thighs (this recipe calls for 6 chicken thighs).
Mix together the barbecue sauce, peach preserve, lemon juice, salt, and pepper in a bowl or gallon-size storage bag. After that, you’ll add the trimmed chicken thighs and place in bowl/bag. Make sure all the meat is covered. Allow the chicken to marinate for a minimum of 3 hours and as long as 24 hours.
Grill Time:
Preheat the grill to medium-high and sear each of the chicken thighs for 4-5 minutes on each side. In short, allow the skin to brown.
Turn the heat down to medium-low, close the grill lid, and grill the chicken until it’s is thoroughly cooked through. The internal temperature should reach 165º F.
Place chicken on a plate and allow to rest for 5 minutes before serving.

- 4 tbsp peach preserve
- 1-1/2 tbsp lemon juice
- salt, to taste
- ground black pepper, to taste
Instructions
- Mix together barbecue sauce, peach preserves, lemon juice, salt, and pepper in a mixing bowl.
- Trim fat from the chicken thighs, if needed. Add the chicken thighs to the bowl and mix until the meat is coated (or place the marinade and chicken in a gallon-size storage bag).
- Let the chicken sit in the marinade for a minimum of 30 minutes and up to 24-hours.
- Pre-heat the grill to medium-high and then sear the chicken thighs for 4-5 minutes per side, until the skin is nicely brown.
- Reduce the heat to medium-low, close the grill lid (or loosely cover with foil) and grill the chicken until it is cooked through and the internal temperature reaches 165° F.
- Transfer chicken to a plate and let rest for 5 minutes before serving.
Notes
- Add an extra 1/2 to 1 tablespoon of lemon juice if the barbecue sauce is on the sweet side.
- To reduce the calories, remove the chicken skin before marinating.
- Vinegar can be substituted for the lemon juice.
- Add red pepper flakes or cayenne pepper for a spicier twist.
