What have you been up to? I had a fabulous weekend of pure laziness and, well, it’s crept into my week just a bit. Hee-Hee. Do you know what? It felt soooo good to just sit on the couch and watch movies, walk hand in hand with my hubby at the mall and eat a few too many meals out! However, work always awaits… at-least I love what I do, right?
Anywho, I recently tried a new recipe that my mom shared with me using my new Pampered Chef brownie pans. It’s low-fat (only 1 point each on Weight Watchers) and delicious! We all know what that means… SCORE! Skinny Pineapple Angel Loaves.
Fluffy and moist loaves with crushed pineapple make for the perfect (and light) summer treat! Whether its a snack or a dessert at your next picnic, you’ll be pleasantly surprised with each delectable bite.

These look wonderful. Do you think these would bake and taste as good using a muffin pan like regular cupcakes? Thanks for posting. I just love getting your emails with all your delightful ideas and recipes.
Kelly Rowe says
Thanks Anne! I don’t think a muffin pan would change the way they bake or taste. 🙂 Appreciate your kind words. Happy July 4th. HUGS.

I just read your recipe for Pineapple cupcakes, I must bake these before long. Only you didn’t say to use the juice of the pineapple or follow the cake mix instructions.
Jenny
Kelly Rowe says
Hi Jenny! You’ll use the pineapple juice 🙂 Do NOT follow the cake mix instructions. Happy baking!
Katherine says
I just made these and it took 30 minutes before they even browned. Are you sure about the 250 degrees?! Maybe something is wrong with my oven! 😮
Kelly Rowe says
Hi Katherine. My sincere apologies! There was a typo and it is 350. Did they still turn out okay? I am so sorry! Thanks so much for letting me know — typo is fixed. HUGS!
Katherine says
Yes, the 2nd batch I made at the 350° Came out WONDERFULLY! So good…it was hard not to eat them all at one time! 🙂

I’ve made this in a 13 x 9 pan and it comes out perfect! Cut in squares and serve with a dollop of lite whipped cream!
Kelly Rowe says
WONDERFUL!! Good to know. Thanks so much sharing. Cheers!
Jennifer says
Sounds so easy and delicious – always a winning combination! Do you know what size the can of pineapple should be? Thanks a bunch.
Kelly Rowe says
Hi Jennifer 🙂 A 20 oz. can is the size I used. Enjoy! Hugs.
Wendy says
I wonder if this would be good with mandarin oranges instead of pineapple? I love pineapple too, I’m just curious. I’ll have to try it and find out. Great and easy recipe that my kids will love too! Thanks!
Kelly Rowe says
Hi Wendy! That’s a very good question 🙂 If you give it a try, please be sure to stop back and let us know. Cheers!
Carey says
how many calories?
Beth P says
I have made this recipe in a 13 x 9 pan. Love the individual idea!! I also topped my cake with homemade whipped cream with shredded coconut mixed in. So yummy!! I am going to have to try the cupcake idea!!
DianaAvila says
Kelly, I just made this recipe in a 9×13″ pan and it came out delicious, Thankyou, was wondering if you could share easy bundt cake recipes.
Cathy says
Hi. I made these in a brownie pan and they taste amazing but was disappointed because they deflated in the centre!! They don’t look like the picture ? Did I go wrong somewhere??
Kelly Rowe says
Hi Cathy. I haven’t made them in a brownie pan, so I can’t really say what might have gone wrong… maybe it needed to cook a bit longer?!? I wish I could be of more help. Try making them in a cupcake pan 😉
Cathy says
I just made these and they deflated in the centre!! Did I go wrong somewhere?? They taste amazing but don’t look like the picture!! Please advise.
Cathy says
Hi Kelly. I thought you used the brownie pan Pampered Chef as the ones pictured are square. I did a tray cupcakes and pretty much same thing.?
Stacy says
Maybe it’s the cake mix you bought? I think you have to get the kind that you just add water to. Maybe that’s what you did. Idk.
Chris T. says
Good evening. I made these cupcakes, but I had to make a modification.
To use a cupcake pan, place the liners in the cup. After mixing the mix, put 1/4 to 1/3 cup of the mix into each liner. Then up the baking time to 22-24 minutes.
NATALIE says
has anyone figures out the calories per muffin if making 24?
Kara says
Just add together the calories etc. from the whole can of pineapple and the whole box of cake mix and divide by 24…
Susan says
I love the idea of useing the muffin pan for this recipe. I’ve only made it in a 9×13 pan.
However, Weight Watchers is now doing Smart Points. So I need to know how many smart points it is for each muffin, when you do 12. Thank you
Kelly Rowe says
Hi Susan. I’m currently not on the program so I’m unable to see what the Smart Points would be… I’m sorry. If and when I’m able to update the points, I will. Thanks so much for stopping by!
mary says
Are they diabetic friendly ?
Kelly Rowe says
Hi Mary. I’m sorry to say that I don’t know. I’m not familiar with a diabetic diet. Thanks for stopping by!
Beverly says
I bought an Angel food cake mix that you add water to. It has the separate pouch for egg whites and flour mixture. You said not to follow directions on package, so do I just dump them altogether in a mixing bowl with the canned pinapple?
Kelly Rowe says
Hi Beverly. You’re going to mix ONLY the dry cake mix with the canned pineapple. The other items won’t be used. Hope that helps. Enjoy!
Courtney says
How many points is this on the new freestyle plan?
Kelly Rowe says
Hi Courtney. I’m not currently on the freestyle plan… I’m hoping to join soon; however, if you have on-line access, you should be able to create the recipe to get the points. Hope that helps.
Lisa says
I’m not sure what the point system was like when this was written but on FreeStyle using SmartPoints, made with Duncan Hines mix, they are 4 points a piece. :/
bipwop says
Sigh. I got all excited about these one point cakes, and made the batch of 24 …
then I got to thinking, no way these are only 1 point. Sugar is the #1 ingredient in the angel food cake mix, and there’s 276 g of sugar in the box!!! Pineapple juice has points (for 0 point canned fruit, you’re supposed to drain the juice).
So I did the math, and each of the 24 cakes has around 4 points on Freestyle (matching calculation of Lisa)
I ate 3, thinking 3 points, but now I see the 3 cakes were 12 points. Yikes!
These are really yummy, but not “worth” 4 points apiece.
I can’t keep these around, I’d eat all 100 points of them. sadly, gotta toss them.
Marilyn says
How does this work for diabetics?
Kelly Rowe says
Hi Marilyn. Unfortunately, I can’t to speak to a diabetic diet. I simply enjoy sharing some of my favorite recipes with my readers and hopefully you can all make adjustments as necessary. Thanks so much for stopping by!
Lza says
I wonder how these hold up if made a day ahead? Thanks.
Kelly Rowe says
Hi Lza. They hold up just fine — just store in an air tight container. Enjoy!
Jennifer says
Ok I made these and they didn’t one out right and I made this cake all the time , I think the pineapple made it very foamy.. I didn’t get that nice tan top
