Sour cream coffee cake pairs beautifully with a steamy cup of coffee on a chilly day. Share the love of cinnamony, buttery coffee cake with your friends and family by baking a batch of sour cream coffee cake mini loaves this holiday season or anytime. Because dessert minis are just so stinkin’ cute, and nobody has to know if you devour the entire cake yourself.
I’ve shared my mouthwatering recipe for coffee cake before, but this heirloom family recipe, passed down from my Great Uncle Jim, deserves paparazzi staking out the oven. It’s so tasty. We’re baking the sour cream coffee cake in mini loaf pans to package up and share this time. You could also opt to make a handful of mini loaves, eat a couple now, and save some for later. They freeze beautifully and make a handy snack when unexpected visitors stop by.
Easy Coffee Cake Mini Loaves
Ingredients
Cake
- 2 eggs slightly beaten
- 1½ cup sugar
- 2 sticks melted margarine or butter
- 1 tsp vanilla
- 1 cup sour cream
- 2 cup flour
- ½ tsp baking soda
- ½ tsp salt
- 1 tsp baking powder
Topping
- ¾ cup brown sugar
- ¼ cup white sugar
- ½ tsp cinnamon
Instructions
- Mix eggs, sugar, butter, vanilla, and sour cream together in a large bowl.
- Combine dry ingredients in another bowl, stir together, and add to wet. Mix well.
- Pour into greased mini loaf pans.
- In a small bowl, combine topping ingredients and sprinkle over both cakes evenly.
- Bake at 350F for 25-30 minutes until a toothpick inserted removes clean.
- Allow to cool 10-15 minutes and gently remove from pan. Enjoy!

Hello there. Was making your coffee cake and noticed in the recipe behind the salt, powder, and soda you have a t. I would read this as a tablespoon. However, knowing that with those ingredients you don’t add that much so translated to a teaspoon. And you have a t behind cinnamon I did add a tablespoon of that. I’m thinking of those first time bakers like my 12 year old daughter and how they were to read it. So wondering if that’s something you’d’ want to change. Also, I only got 5 mini loaves and therefore way too much streusel topping left. I might make another batch and use it for that. I have them in the oven now, excited to try it.

A lower case t is teaspoon. Upper case T is tablespoon.

Happy Holidays! I just made a 10 loaf batch of these mini cakes. With the amount of batter I was only able to get 4.25 loaves. Wondering how full the loaf pans should be filled with batter?

Same here.. my 10 mini loaves are not even half full with one batch of dough. I’ll have to double it to make a full 10 loaves.

I am so bummed at this. I was so excited to find a cinnamon bread designed for mini loaf pans, however, I only managed to get 7 (not 10) loaves. Also, the pics looks nothing like how it turned out. Very disappointed

Just a suggestion. Adding directions to recipe as to removing mini coffee cakes from pan would be helpful
