A hearty vegetable soup that is simple, yet delicious!
I don’t know about all of you, but it’s been a rough winter here in Missouri. Lots of chilling temperatures, slick roads and shoveling. With the temperatures being so bitter cold as of late, there is one food that seems to fit the bill 99% of the time. Any guesses? Soup. Whether it’s a big hearty bowl of chili or a Homemade Chicken Noodle Soup, there’s something about a hot bowl of soup that warms us from the inside out. Gosh, I think of the many times I’ve enjoyed some soup paired with cheese and crackers or grilled cheese sandwiches. Just sitting here typing this makes me feel all warm and cozy.
If soup is something you tend to enjoy during the winter months, this recipe will certainly fit the bill. Poor Man’s Soup.
Poor Mans Soup
Ingredients
- 2 10-3/4 oz cans of Tomato Soup
- 1 lb. Hamburg
- Mixed Frozen Vegetable 10-11 oz bag
Instructions
- Brown hamburg and drain fat. Set aside.
- Mix canned tomato soup with water in pan.
- Add frozen vegetables and hamburg.
- Simmer until heated through.
If you haven’t tried it, you’re in for a treat!

I learned how to make “poor man soup” many years ago from my late husband. His father used to make this soup but instead of using beef he made it with spam cut into small chunks. Back in the 50’s and 60’s spam was about the cheapest “meat” you could buy especially when you had to feed a family of 9. I did add some onions and garlic for flavor. I added enough water to cover all of the ingredients and instead of tomato soup I added a large can of diced tomatoes. Needless to say this soup became a staple in my household and a pot full of soup only lasted a couple of days.
