Frozen Rocky Road Pudding

Today I thought I would share a recent treat that I whipped up and have been enjoying a scoop every now and again when I need a little chocolate and something cold and refreshing.  If you like Rocky Road Ice Cream, you’re sure to enjoy a dish of this Frozen Rocky Road Pudding.  Easy and delicious… coming right up!

Well, the heat has officially made its appearance here in St. Louis and he brought his pal humidity along with him!  Boooooo.  I can handle the heat without the humidity; however, that doesn’t seem to be our luck here in STL.  

So, that means having to stay cool one way or another. Drinking lots of water and stocking up the freezer with frozen treats sounds about right.  Heehee.

Frozen Rocky Road PuddingDelicious Frozen Treat

What is your favorite chocolate frozen treat?  Let’s see… I’m a big fan of ice cream and peanut butter.  Oh my goodness…. yum!  Maybe I need to give this a try with peanut butter.  Chocolate and peanut butter have a way of stealing my heart.  

Chocolate chunks, marshmallows, and peanuts make this frozen treat a true delight.  This Rocky Road Frozen Pudding Treat is incredibly easy and a chocolate lover’s dream.

Tell me this dessert doesn’t sound delicious?  I added a few extra peanuts to the top of my Rocky Road pudding treat before placing it in the freezer.  However, I love peanuts, maybe that’s why I’m a bit of a nut myself (giggle).  

Serve with fruit or alone — either way, I bet you’ll come back for more.  In short, stay cool and eat more chocolate.  Enjoy.

Frozen Rocky Road Pudding

Prevent your screen from going to sleep

Ingredients

  • 2 packages 3.9 oz each Chocolate Instant Pudding
  • 2 cups cold mils
  • 1 tub 8 oz. Lite Cool Whip Whipped Topping, thawed
  • 1 cup miniature marshmallows cut into quarters
  • 1/4 cup salted peanuts
  • 4 oz. Semi-Sweet Chocolate coarsely chopped

Instructions

  • Beat dry pudding and milk in a large bowl with whisk for 2 minutes.
  • Stir in cool whip, marshmallows, peanuts, and chocolate.
  • Spoon into 2 qt. freezer-safe container, and cover.
  • Freeze 4 hours or until firm.
  • Scoop into dessert dishes and serve.
