Reasons to Indulge

Making Chocolate Almond Clusters with Sea Salt

Simplicity at its finest. The three ingredients include:

Chocolate Chips
Almonds
Sea Salt

Almonds and Chocolate Chips

Step 1: Melting the Chocolate

Begin by melting the chocolate chips. You can use a microwave or a double boiler for this task. If using a microwave, heat the chocolate chips in 30-second intervals, stirring each time until the chocolate is smooth and fully melted. (If using a double boiler, place the chocolate chips in a heatproof bowl set over simmering water, stirring until they melt). Be cautious not to overheat the chocolate, as it can become lumpy and lose its glossy finish.

Step 2: Mixing in the Almonds

Once the chocolate is silky and melted, it’s time to introduce the almonds. Gently fold the almonds into the melted chocolate, ensuring each almond is generously coated in the luscious chocolate.

Step 3: Creating the Clusters

Using a spoon or a cookie scoop, carefully drop spoonfuls of the chocolate-almond mixture onto a lined baking sheet. You want to space them evenly, leaving some room between each cluster. This step allows the clusters to maintain their individual shapes as they set.

Step 4: Sea Salt Finishing Touch

Before the chocolate fully sets, sprinkle a pinch of sea salt atop each cluster. The salt crystals will adhere to the warm chocolate, creating a beautiful contrast of simply irresistible flavors. However, don’t be too heavy-handed with the salt; a little goes a long way.

Step 5: Allowing to Set

Lastly, allow the Chocolate Almond Clusters with Sea Salt to set completely. You can speed up this process by placing them in the refrigerator for about 30 minutes. Once set, the clusters will easily lift off the baking sheet.

Variations:

This recipe is super versatile, too. Variations might include:

  • Experiment with different types of nuts in place of almonds. Try cashews, pecans, walnuts, or macadamia nuts to add unique flavors and textures to your clusters. You can also mix a variety of nuts for a nutty medley.
  • Add dried fruits like raisins, cranberries, cherries, or apricots to your clusters for a sweetness and a delightful contrast to the nuts and chocolate. Also, chop the dried fruits into smaller pieces for even distribution.
  • For coffee lovers, consider adding finely ground espresso beans or instant coffee granules to the melted chocolate. This creates a mocha-inspired flavor and a subtle caffeine boost to your clusters.
  • Mix shredded coconut into the melted chocolate and almond mixture for a tropical twist—obviously, the coconut’s sweet, nutty flavor pairs beautifully with the chocolate and sea salt.
  • Combine mini marshmallows, chopped nuts, and chocolate chips in your clusters for a playful twist on the classic rocky road flavor. In addition, the marshmallows add a soft and chewy texture to the clusters.

Feel free to mix and match these variations to create your own signature Chocolate Almond Clusters. Experimentation is part of the fun, and you might discover a new favorite flavor combination along the way.
