Well, since it’s officailly fall, I figured I should share something to welcome in the cooler temps {wink-wink}. If the cooler temps haven’t ushered in yet — I’ll keep my fingers crossed that you have them sooner than later. Sound good? Now, let’s enjoy a bowl of Black Bean Soup, shall we?
Of course you could enjoy a bowl of this delicious goodness all year long; however, I tend to make a lot of soups, stews and chili in the fall and winter. What’s your preference? My mom recently shared this with me and I am in love with the burst of flavor that this soup delivers!

Black Bean Soup
Ingredients
- 1 tbsp extra virgin olive oil
- 1 tbsp garlic sliced
- 1 small onion diced
- 1 tbsp cumin
- 2 15 oz can of black beans
- 2 cups vegetable stock or water
- 1 bay leaf
- 1-1/2 tbsp low sodium soy sauce
- 1 tbsp lemon
- Chopped cilantro to garnish optional
Instructions
- Heat the olive oil over medium heat in a soup pot. Add the garlic and onions, and cook until the onion are translucent.
- Add the cumin, and sauté a few more minutes.
- Add the canned beans (do not drain), stock (or water) and the bay leaf.
- Bring to a boil, reduce heat and simmer for 10-15 minutes.
- Add the soy sauce and lemon juice and simmer 1 more minute.
Enjoy the convenience of a one-dish meal simmering on the stovetop
with this savory Black Bean Soup. Serve with cheese and crackers… perfection!

I haven’t had black bean soup in years but always loved it. Your recipes sounds easy and delicious. I’ve never seen it with soy sauce in it. That’s different. Looking forward to trying this as our weather gets cooler.
