Confession. I fell off the diet bandwagon while my mom was in town… Her cooking was my demise, #truestory! I was blessed to have her here for TEN days! And guess what? She was willing to cook dinner for us every night while she was here! Talk about being a little spoiled. While some meals were healthy, others weren’t so much. However, the reality is, I enjoyed every single bite! {giggle} Soooo, with that being said, I thought I better get back on track! Why must I love food so much? Anywho, that’s where these Roasted Brussels Sprouts come into the picture!
This is my moms recipe — and while Brussel Sprouts aren’t everyones favorite food, these are quite tasty and incredibly easy! I couldn’t wait to get my photographs taken and eat them up.

Roasted Brussel Sprouts
Ingredients
- 1 lb. brussel sprouts
- 2 tbsp Extra Virgin Olive Oil
- 1/2 tsp kosher salt
- 1/4 tsp freshly ground pepper
- Parmesan Cheese optional
Instructions
- Set your oven to 400.
- In a large bowl, mix the brussel sprouts with the olive oil, salt and pepper.
- Pour them on sheet pan, preferably lined with parchment paper, and roast 35 to 40 minutes until crisp on the outside and tender on the inside.
- Shake the pan from time to time to brown the sprouts evenly.
- Top with parmesan, if desired, and serve.

Thank you Kelly for the nice and easy recipe. You’ll get back on your diet. It’s hard to be on a diet when you have visitors.

Love me some brussel sprouts. Didnt like them for such a long time…they were always so bitter but now that I know how to cook them they are delightful.
Cooking them too long makes them bitter.
