Confession.  I fell off the diet bandwagon while my mom was in town…  Her cooking was my demise, #truestory!  I was blessed to have her here for TEN days!  And guess what?  She was willing to cook dinner for us every night while she was here!  Talk about being a little spoiled.  While some meals were healthy, others weren’t so much.  However, the reality is, I enjoyed every single bite!  {giggle}  Soooo, with that being said, I thought I better get back on track!  Why must I love food so much?  Anywho, that’s where these Roasted Brussels Sprouts come into the picture!

This is my moms recipe — and while Brussel Sprouts aren’t everyones favorite food, these are quite tasty and incredibly easy!  I couldn’t wait to get my photographs taken and eat them up.

Roasted Brussel Sprouts

Ingredients

  • 1 lb. brussel sprouts
  • 2 tbsp Extra Virgin Olive Oil
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly ground pepper
  • Parmesan Cheese optional

Instructions

  • Set your oven to 400.
  • In a large bowl, mix the brussel sprouts with the olive oil, salt and pepper.
  • Pour them on sheet pan, preferably lined with parchment paper, and roast 35 to 40 minutes until crisp on the outside and tender on the inside.
  • Shake the pan from time to time to brown the sprouts evenly.
  • Top with parmesan, if desired, and serve.

Notes

Without the Parmesan Cheese, for two servings, the PointsPlus value is 4 per serving and for four servings, the PointsPlus value is 2 per serving.

    I love love roasted (any) vegetable!!! But brussel sprouts are up there in the top 5!

    Love me some brussel sprouts. Didnt like them for such a long time…they were always so bitter but now that I know how to cook them they are delightful.
    Cooking them too long makes them bitter.
