A simple recipe bringing some of our favorite fall flavors together makes this Skinny Pumpkin Whip a guilt free treat for guests or a perfect afternoon snack!
Skinny Pumpkin Whip

Oh yes! With the cool fall weather, comes some of my favorite comfort foods. Chili, apple crisp and all things pumpkin! Pumpkin Pie. Pumpkin Spice Lattes. Pumpkin Scones.
Do you love pumpkin? I’m finally jumping in on the pumpkin fun and sharing a delicious Pumpkin Whip recipe with you! A dear friend of our family had given this recipe to my mom and she couldn’t stop talking about it. So, of course, I demanded a copy {giggle}. What’s to love about this? Well, it’s low in fat and it tastes like pumpkin pie without the crust. The hubs and I ate the entire bowl in one afternoon. Oops! Did I just confess that out loud? On the blog? Yup. It’s that good!
Funny thing, my husband claims he’s not a big pumpkin fan, but the last two pumpkin desserts I’ve made he has LOVED. Asking for seconds is always a good sign {wink}. Enjoy!

Pumpkin Whip
Ingredients
- 1 oz. package Jello Sugar Free Instant Butterscotch Pudding
- 1-1/2 cups 2% milk
- 1 cup pumpkin
- 1-1/2 cups cool whip lite or fat free
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon vanilla extract
Instructions
- In a large bowl, stir the pudding mix and milk together until thick
- Stir in pumpkin, spices and vanilla.
- Fold in cool whip.
- Cover and chill for at least 2 hours.
- Garnish with cool whip, pecans or toasted coconut.

I have to say, I’m not actually a fan of pumpkins, but the photos make me want to try it, and I love that piece of tree you have as a photo prop. That makes me want to go out to my woodpile and find one of my own 🙂
