Phew!  Is it hot where you are?  Today it’s going to be 95 degrees!  I think I’ll stay inside and stay nice and cool {wink}.  However, if I need a low-fat cold treat — I’m going to grab one of these delicious Mini Mint Cookies and Cream Ice Cream Sandwiches.  Yes, please!

Let’s start with real life.  I spotted this recipe in a Weight Watchers magazine.  At first I thought,

“Where do I get chocolate wafer cookies?
I guess I could make them.
Let’s see if we can find them first.”

So, I did just that.  Kept an eye out and would you believe I found the Famous Chocolate Wafers by Nabisco at a local Schnuck’s grocery store?  I was soooo excited.

I woke up one morning and decided to whip up a batch.  Here comes the real life and a great deal of disappointment.  95% of the chocolate wafers were broke.  Womp Womp.  I was only able to make a few.  They were DELICIOUS! So, in hindsight, you might make your own to ensure you’ll have a durable chocolate wafer.  Either way, you won’t be decided with the flavors of these frozen treats!

Mini Mint Cookies and Cream Ice Cream Sandwiches

Prep Time 10 minutes
Total Time 10 minutes
Servings 12 ice cream sandwiches

Ingredients

  • 28 chocolate wafers cookies divided
  • 1 1/2 cup light vanilla ice cream softened
  • 1/4 tsp mint extract

Instructions

  • Place four cookies in a plastic bag and crush with a rolling pin; place cookie crumbs in a small bowl.
  • Add ice cream and mint extract; stir to combine.
  • If the ice cream is too soft, set back in the freezer for 10-15 minutes.
  • Spoon 2 Tbsp mixture onto each of the 12 cookies and top each with a second cookies.
  • Freeze about two hours, then serve.

    I’m with you- why make ’em when you can buy ’em! In fact, I just scoured our local grocery stores for bruschetta toasts so I wouldn’t have to slave over enough ciabatta for 100 people. Unfortunately in my case, the baguettes were sliced by hand by me…. Happy to hear that you scored big though! And these look delish.
