Spinach Omelet :: Five Things Friday

This healthy spinach omelet requires the following FIVE ingredients:
Extra Virgin Olive Oil, Baby Spinach, Garlic, Eggs, and Low Fat Cheddar Cheese

Here’s how to prepare it:  Warm 2 tsp. of extra virgin olive oil in a skillet over medium heat.  Saute 1/2 cup baby spinach with 1/2 tsp. of  minced garlic until the spinach is wilted, about 1 minute.  Beat 1 egg plus 2 egg whites; pour over the spinach and cook without stirring until eggs are firm, about 4 minutes.  Top with a slice of 2% cheddar or low fat shredded cheddar.  Season with salt and pepper; cook 1 minute longer, then fold.  Serve with 2 sliced of whole-grain toast.

Those five ingredient total all of 400 calories.  It’s super duper yummy — ENJOY!!
