I love bread. It might just be one of my favorite foods — rolls, pitas, loaves, baguettes and more. All those glorious carbs! {giggle}. So, you can imagine my excitement when I found a delicious recipe that included flatbread, but stays within my point limits on Weight Watchers. If you’re a vegetarian or don’t mind a meatless dish every now and again, todays recipe might just be up your ally. Warm Mozzarella and Tomato Flatbreads.
Warm Mozzarella and Tomato Flatbreads
Ingredients
- 1 pound prepared fresh or frozen thawed pizza or bread dough
- 1 1/2 cups cherry tomatoes each quartered
- 1 tablespoon white balsamic vinegar
- 2 teaspoons olive oil
- 4 oz. small fresh mozzarella balls each quartered
- 1 1/2 teaspoons fresh thyme leaves
Instructions
- Preheat oven to 425. Spray large baking sheet with olive oil (unless using non-stick baking sheet).
- Sprinkle work surface lightly with flour. Place dough on work surface and divide evenly into 4 pieces. With lightly floured rolling pin, roll each piece of dough into an approximate 7x4 oval. Transfer ovals to prepared baking sheet. Lightly spray top of dough with olive oil cooking spray. Bake until flatbreads are golden, 12-15 minutes. Transfer flatbreads to rack to cool slightly, 2-3 minutes.
- Meanwhile, combine tomatoes, vinegar, and oil in medium bowl; toss to coat. Top warm flatbreads even with tomatoes and mozzarella. Sprinkle with thyme and salt and serve.
Notes
I found these to be just as tasty cold (as leftovers). It’s a medley of flavors. Enjoy!
