Skinny Broccoli and Bacon Mini Frittatas

Let’s talk a little bit about breakfast! Sound good? I love-love-love breakfast food. Bob Evan’s is one of my favorite breakfast spots when I can splurge a bit on the calorie intake. I always order the Farmers Breakfast.  What does that include?  Sooo glad you asked!  I order mine with Eggs (over easy), Bacon, Hash browns and French Toast (extra butter, please). I sound like a porker, huh? Yup. Well, when it comes to breakfast — bring it! {giggle}

Skinny Broccoli and Bacon Mini Frittatas with Live Laugh Rowe

However, that is only an occasional treat.  Here on the homestead, a typical breakfast consists of Greek Yogurt, Poached Eggs or a bowl of Cheerios with sliced bananas.  Then there’s the weeks where I decide to whip up some frittatas or muffins.  Recently I decided to give this weight watcher recipe a try, Broccoli and Bacon Mini Frittatas.  Weight Watchers Points+:  5 points

Broccoli and Bacon Mini Frittatas

Savory little omelettes, perfect for an on-the go breakfast or Sunday brunch!
  • 6 slices uncooked turkey bacon, sliced into small pieces
  • 2 cups chopped broccoli, frozen (bagged)
  • 1 small red onion, chopped
  • 2 tsp italian seasoning
  • 2 Tbsp all-purpose flour
  • 1 cup buttermilk
  • 3 large eggs
  • 3 large egg whites
  • 4 Tbsp Parmesan cheese, freshly grated
  • ½ tsp table salt
  • ½ tsp black pepper, freshly ground
  1. Place the oven rack in the center of the oven; preheat the oven to 350.
  2. Heavily spray 12 cup muffin pan with cooking spray.
  3. Spray a nonstick skillet with cooking spray and place over medium heat. Add the bacon and saute until crispy, approximately 6-7 minutes. Transfer to plate.
  4. Return the skillet to the heat. Add the broccoli, onion, and Italian seasoning. Cook until the vegetables are tender, about 7 minutes. Remove from the heat; stir in the flour and the cooked bacon. Set aside and allow to cool.
  5. Whisk together the buttermilk, eggs, egg whites, cheese, salt and pepper in a large bowl until blended. Stir in the cooled vegetable mixture, then spoon evenly into the muffin cups.
  6. Bake until set in the center, about 20 minutes.
  7. Use spatula or knife to remove from muffin cup.
Serving size: 3 egg cups
