I seem to be on a peppermint kick this year {giggle}. Oh well — peppermint is all kinds of delicious! Right? I love the hint of peppermint that comes with this yummy holiday treat! Marble Cupcakes with Peppermint Cream Cheese Frosting. What’s not to love about a festive dessert? Red Velvet and White cake make the yummy marble cupcakes, then you top it off with a Peppermint Cream Cheese Frosting. You have a little drool on your chin there… {hee-hee}
This is another recipe where I’ve done a little substituting using International Delight creamer. The Peppermint Chocolate Truffle is the secret ingredient in the frosting. Oh yeah! Let’s get to it, shall we?
Marble Cupcakes with Peppermint Cream Cheese Frosting
Ingredients
Marble Cupcakes
- 1 box Red Velvet cake mix
- 1 box white cake mix
Peppermint Cream Cheese Frosting
- 1 8-ounce package cream cheese, softened
- 1 cup butter or margarine softened
- 1 2-pound package powdered sugar
- 5 tablespoons International Delight Peppermint Chocolate Truffle Creamer
Instructions
Marble Cupcakes
- Prepare each cake mix according to box directions in separate bowls.
- Spoon red batter alternately with white batter into cupcake liners until 3/4 full. Swirl batter with a small knife.
- Bake at 325 for 25-30 minutes or until wooden pick inserted in center comes out clean. Remove from pan and cool on wire rack.
Peppermint Cream Cheese
- Beat cream cheese and butter at medium speed with an electric mixer until creamy. Gradually add creamer and sugar, beating at low sped until smooth.
Incredibly easy, festive and delicious! You can’t beat that combination.
