I seem to be on a peppermint kick this year {giggle}.  Oh well — peppermint is all kinds of delicious! Right?  I love the hint of peppermint that comes with this yummy holiday treat!  Marble Cupcakes with Peppermint Cream Cheese Frosting.  What’s not to love about a festive dessert?  Red Velvet and White cake make the yummy marble cupcakes, then you top it off with a Peppermint Cream Cheese Frosting.  You have a little drool on your chin there…  {hee-hee}

Marble Cupcakes with Peppermint Cream Cheese Frosting

Servings 3 dozen

Ingredients

Marble Cupcakes

  • 1 box Red Velvet cake mix
  • 1 box white cake mix

Peppermint Cream Cheese Frosting

  • 1 8-ounce package cream cheese, softened
  • 1 cup butter or margarine softened
  • 1 2-pound package powdered sugar
  • 5 tablespoons International Delight Peppermint Chocolate Truffle Creamer

Instructions

Marble Cupcakes

  • Prepare each cake mix according to box directions in separate bowls.
  • Spoon red batter alternately with white batter into cupcake liners until 3/4 full. Swirl batter with a small knife.
  • Bake at 325 for 25-30 minutes or until wooden pick inserted in center comes out clean. Remove from pan and cool on wire rack.

Peppermint Cream Cheese

  • Beat cream cheese and butter at medium speed with an electric mixer until creamy. Gradually add creamer and sugar, beating at low sped until smooth.
