Can you believe that another new school year is in full swing? Seriously, where does the time go? We have a bus stop outside of our house. The brakes of the school bus and the chatter of children brings back some of my fondest childhood memories.
Which makes me wonder — do you remember what your mom used to pack in your lunches? I do. I especially remember the lunches where she would slip a note of encouragement or a reminder of how much she loved me. I remember some days loving what was in that lunch and other days wishing I had lunch money. {hee-hee} Today I thought I would share a kid-approved lunchbox sandwich with all of you. Actually, it’s a chicken salad with a couple alternatives you can try out on your kids….and it incorporates fruit and veggies! You can’t beat that.
Once you’ve prepped and chopped up your choice of fruit and/or vegetables, set aside. Open and drain your chicken, then add your mayonnaise.
I whipped up two quick versions. First, let’s whip up some chicken salad with apple and grapes.
You might even toss in a few walnuts if there are no peanut allergies.
Another completely different option is simply adding
dried cranberries and celery to your chicken salad.
This happens to be one of my favorites too. You can’t beat a sandwich that can feed both the young and the old and have an enormous amount of flavor! All that’s left is making the mouthwatering sandwich. Today, I’m using Wonder Smartwhite for kids! Wonder bread has been a family favorite for over 90 years and they now offer more than 20 different varieties. Smartwhite for kids hast only 50 calories per slice and the fiber of 100% whole wheat bread, this choice is a win-win for you and your family. Believe it or not, it also contains the calcium of an 8 oz. glass of milk. This sandwich is thee perfect source of calcium, protein, fiber, fruits and/or vegetables. One word: FABULOUS!
Cut in fours or use a fun cookie cutter. I couldn’t pass up using the leaf since it is fall!
Fun. Healthy. Kid-approved lunchbox sandwiches.
Who says you can’t put a little fun in that lunchbox?

Sadly, my guy is a creature of habit….. The sandwich stays the same, a fruit roll up, Oreos, ( unless I have made cookies) and chips! I do put in a napkin that goes with the season and a fun note on occasion, to surprise him! We love wonder smart white!

I have cookie cutters that I use on Chloe’s Sandwiches. I also make homemade lunchables for her. Just this week since her reading is getting better I also have started writing her notes. She loves the notes.

We use sandwich cutters, or cut the sandwiches into fun shapes free handed. We also try fruit, or new cheeses on my Kindergartner”s sandwich. I cannot wait to send notes, once he is an avid reader.

Such a fun post! I don’t have children, but I love trying different things when making sandwiches and using cutters…well, that reminds me when mom helped pack our lunches! LOVE! Should I win…I will probably give a few of the coupons to families who have several children…bless them!

I keep packed lunches fun by adding a surprise snack or making a shape sandwich, or, who am I kidding? I have to give my husband credit as he is more of the gourmet than I am!

We use sandwich cutters that cut off the crust and make shapes! And we stick to PB&J but might need to try chicken salad with FINELY chopped veggies! 😉

i try to keep the excitement up by switching out a treat or a “cookie cutter” sandwich.
thankfully, my kids will eat their packed lunch (so far!) but it’s the treats that keep them going. last week i placed a candy corn on top of their sandwich. sounds yucky, i know. but it works. 😉
