I LOVE Summer, for the simple pleasure of fresh grown vegetables. Amongst my favorites — yellow squash. I remember my Mom frying that up for us when we were kids, just talking about it makes my mouth water. {Smile} I’ve carried on the Fried Yellow Squash Kuert Tradition. Courtesy of my sisters fabulous co-worker, JoAnn, who brought in cucumbers, yellow squash and zuccini all summer from her garden , we had a surplus of vegetables over the past few months. What a blessing; however, we ate so much of them that we probably could join the Veggie Tales cast. Hee hee. Anywho, this past weekend my husband and I feasted, once again, on Fried Squash. Being that it may be one of the last times of the season, I wanted to snap a pic or two and post a blog. Of course you could eat this all year round; however, with Fall rolling in — my menu starts to change… and I can’t stinkin’ wait. Hoorah! Welcome Autumn, Fall and Winter! Oh how I’ve missed you. So, before the First Day of Fall on September 22nd, go out and buy yourself some yellow squash and fry it up. Served with Turkey Sliders and a side of Apple Sauce, your family will be begging for more. Get cookin’!
