Well, I’m happy to report that I have successfully completed week one of the #EatFreshChallenge! Aaaaand — it was a huge success!  I learned that it’s all of kinds of easy breezy to do your meal planning with Cooking Planit, using fresh ingredients and Colavita products.  It’s not rocket science. Can you believe it? {giggle}

I think we even spent LESS money because we had a plan of action rather than flying by the seat of our pants.  I loved stocking up on fresh vegetables, meats and more!  It took a little getting used to, but the meals were easy and mouthwatering!

From Salmon to Salads, we had a menu full of savory foods and each bite was infused with flavor!  So, all in all, week one was a HUGE success.

*substituting chicken for flank steak

TUESDAY:
Breakfast – Grapefruit Brulee with Honey Mascarpone

WEDNESDAY:
Chicken Salad

THURSDAY:
Golden Beet and Cauliflower Soup
Turkey Burgers with Lemon Dill Yogurt

FRIDAY: 
Heading out of town…

*Weekends are less structured.

    I would like to cook a pasta dish with fresh shrimp and artichokes and lots of veggies from the garden. Garlic bread and a nice salad. My grandson, Cooper, loves shrimp so I would have him over and he would probably eat most of it!

    Pasta is always a favorite with us! Just a special ingredient you love with Pasta and Voila you have yummy dish. Of course no pasta dish would be complete with olive oil!
