If you like bacon and quiche, prepare yourself for this tasty dish!  Crustless Bacon Quiche.

Some days I think quiche might be my love language (hee-hee).  With or without crust, quiche is an all-time favorite of mine.  Okay, okay — I do tend to lean towards quiche with crust a little more.  However, today I have this crustless quiche with lots and lots of bacon.  Mmmmm.

Any true quiche lover knows one of the best places to get a good quiche is a tea house.  When I had my rotator cuff surgery, I met a lady who loved eating out and trying new places.  We visited a few different tea houses.  It was so much fun, plus with quiche at a tea house comes scones.  Sheesh!  I’m officially having a craving overload here.

Seriously, you don’t realize how many different kinds of quiche there are.  One thing is for sure, I haven’t met a quiche I didn’t like — unless it was a little too dry, of course.

Over the years I’ve tried several different kinds of quiches.  If you’re going to go crustless, Bisquick is a great contender.   I’m sure you’ll find this crustless quiche recipe to be a new flavorful favorite!

Crustless Bacon Quiche

Ingredients

  • 12 slices center cut bacon cooked and crumbled
  • 1 cup shredded swiss cheese
  • 1/3 cup chopped green onion
  • 3/4 cup Original Bisquick mix
  • 1 1/2 cups milk
  • 3 eggs
  • 1/8 teaspoon pepper

Instructions

  • Heat oven to 400. Grease 9-inch pie plate.
  • Sprinkle bacon, cheese and onion into pie plate.
  • In medium bowl, beat remaining ingredients until well blended and pour into pie plate.
  • Bake 35-40 minutes or until knife inserted in center comes out clean.
  • Let stand 5 minutes before serving.

Notes

Use extra cheese, bacon and onion for garnish, optional.
