Chocolate Espresso Bites, anyone? A little bit of chocolate and a little bit of coffee? Yes, please!! I mean, how can you go wrong? This Chocolate Espresso Cookie Recipe is perfect year round, but I put a holiday spin on it!
I don’t know about you, but I’m a pretty big fan of M&M’S® — my favorite being peanut M&M’S! I could snack on those all day every day {giggle}. Adding the baking minis to these cookies was an extra dose of chocolate that took them to a whole new level of delicious! Mmmm.
Another great idea is using a peppermint flavored icing… It’s a perfect bit of holiday deliciousness!
Chocolate Espresso Cookie Recipe
Ingredients
- 1 package chocolate cake mix
- 2 eggs
- 1/3 cup vegetable oil
- 1 package M&M'S® Holiday Baking Minis
- 1/2 cup sprinkles
- 2 tsp. espresso powder*
- 1 can prepared frosting vanilla or peppermint flavor
Instructions
- Preheat oven to 350 degrees. In a medium-sized bowl, mix cake mix, eggs, and oil. Add espresso powder and mix.
- For each cookie, roll 1/2 tablespoon of dough into a ball and place on cookie sheet.
- Bake for 10-12 minutes.
- Cool on baking sheet 1-2 minutes, then remove cookies from pan to cool on wire rack.
- Using a small spoon, spread a small dollop of frosting onto each cookie. Sprinkle with Holiday baking mini M&M'S® and sprinkles.
