Now that the patio is finally completed, The Boy and I have been sitting fireside nightly. That can only mean one thing. Time to kick off my shoes, sit back with a fun cocktail and watch for shooting stars. I don’t know about you, but I can only make the same drink so many times. I’m constantly playing bartender. Last week, I got a bit adventurous and decided to play around with what was sitting on the bar cart.
Yes, there were a few duds, but there were also a few that stood out from the crowd. Now I don’t know about you, but I can’t do super sweet. I can only do one cocktail with peach schnapps, Malibu, or amaretto. Although these libations are super tasty, it’s just too much for my palette after one. Enter limoncello. Perfectly crisp, tart and refreshing on a hot summer night.
I mixed it with a bit of Prosecco and did a jiggetty jig. Come to momma.
Raspberry Limoncello Cocktail
Ingredients
- 3 parts prosecco chilled
- 1 part limoncello chilled
- Fresh Mint for garnish
- Frozen Raspberries to serve as ice cubes
Instructions
- Add Prosecco and Limoncello to shaker and shake.
- Add frozen raspberries and garnish with a sprig of mint.
Winner winner chicken dinner.
