I recently started my ‘oh-fficial diet-oh.’ However, before that could begin, I had to have one of my favorites treats –the Cookie Monster. Have you ever eaten at Cheddar’s? Well, it was there that this sinful treat was introduced to me in college. There were many nights that we would pile into the car for a night cap that included a cup of coffee while splitting a cookie monster. We were hard working and sick of studying college students, so we deserved the break, right?
A couple of years ago, my mom surprised me and my hubby with a Skookie for Christmas. Oh. My. Glory. With this genius idea, I could make them whenever I want!! They make a great late night snack for you and your hubby too! Not to mention all of the other wonderful things you can make in them. Okay, Okay, I’ll stop babbling and get to the fun part of this post — Making a Cookie Monster in these fabulous cast iron skillets. Here we go…
What you’ll need: Chocolate Chip Cooke Dough (I chose the lazy route and bought it, but I usually make my own), Chopped peanuts, Whip Cream, Chocolate Syrup, and Vanilla Ice Cream.
You’ll put about 3/4 cup to 1 cup of cookie dough into the cast iron skillet. Evenly filling the skillet. Then into the oven this beauty goes {smile}. Set your oven at 350 and bake for about 13-15 minutes. While they cook, start prepping the dressings {yum}.
Sooo, now that our goodies are prepped, we wait… and wait… and patiently wait for this goodness to finish up it’s baking time. The timer goes off!! Ooooh, it’s time to start making this yummy cookie look even yummier.
I like to put about three scoops of ice cream, squirt on that syrup, then sprinkle with peanuts. I then spray on the whip cream {are you getting hungry yet? the good lord knows I am} and sprinkle more peanuts on. Voila! Now, you can dig in to thee ultimate sweet treat — or you can drive to your nearest Cheddar’s {giggle}.

Oh, this is just too devilishly divine to post today when I'm contemplating eating healthier. Now I'm craving sweetness. I better finish that apple cake I made last night, you know, get all the sweets out before the diet starts. Hey, if I'm losing 5 pounds, what's another 5 to really feel like I've accomplished something?
