When growing up, I think one of my favorite meals (hands down) was soft tacos. My mom made the BEST cornmeal crepes. If mom said we were having tacos for dinner, the first question asked was, “soft tacos?” This Soft Taco Recipe will not disappoint — and homemade is always better!
Homemade Soft Taco Recipe
While the pictures do no justice to these soft tacos, I can assure you that they are amazing!
My mom still has (and uses) the same crepe maker. I wanted to try my hand at making soft tacos, so I started looking for a maker. I found this CucinaPro Cordless Crepe Maker. The price was right and the reviews were good, so I purchased one.
This crepe maker is great! I love the non-stick surface too! I would say that there is an art to crepe making — practice makes perfect, that is for sure! They can be too thick or too thin and it can be incredibly frustrating; however, after making 3-4, you’ll get a good idea of what you need to do for consistency.
Homemade Soft Taco Recipe | Cornmeal Crepes
Ingredients
- 3/4 cup flour
- 1/2 cup cornmeal
- pinch of salt
- 1 1/4 cup milk
- 3 eggs
- 1 Tbsp. melted margarine or butter
Instructions
- Add all ingredients into a small mixing bowl and beat with electric mixer at medium speed until all ingredients are combined.
- Pour into dipping plate (or 9 inch metal pie pan).
- Prepare crepe according to your crepe maker instructions.
- Stir batter occasionally as cornmeal has a tendency to sink.
As you can see, imperfections are normal. These Cornmeal Crepes make the perfect soft taco. I’m officially craving tacos now.

These sound delish and very easy to make. Just a really stupid question, I am from Africa and so I am not sure what you call cornmeal there. Is it simply flour made from maize instead of wheat? If so then we call it maize meal and we use it in cooking a lot but not quite like this.
I just wanted to be sure.
