Oh my yummy goodness! Do I have a treat for you.  Tis the season for gift giving and food gifts are always a win-win.  One of my holiday favorites has become Candied Pecans.  Of course they could be eaten year round; however, they typically make an appearance around Thanksgiving and Christmas in my home.  I recently decided to try my hand at a couple of almond recipes. One of them was for these Roasted Pumpkin Spiced Almonds.

I seriously didn’t know what to expect, but I can assure you they are packed with flavor and they won’t last long!  My husband has asked several times for me to make more….  #score.

Recipe at livelaughrowe.com #almondsThey look delicious, don’t they?  You kinda want to reach in and grab one {giggle}.  I found these darling little jars at Michael’s. They were the perfect size — kind of wishing I had bought more!  Anywho, add a little twine around the lid with a handwritten tag…  and voila!

Roasted Pumpkin Spiced Almonds

Prevent your screen from going to sleep

Ingredients

  • 4 cups whole natural almonds
  • 1 egg white
  • 1 teaspoon water
  • 1/3 cup granulated sugar
  • 1/3 cup packed brown sugar
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon salt

Instructions

  • Preheat over to 350 degrees.
  • Spread almonds in a single layer on baking sheet. Bake for 10 minutes.
  • Remove from over and place on wire rack; cool 30 minutes.
  • Reduce oven temperature to 325 degrees.
  • Grease 15x10x1 pan (or line with parchment paper); set aside.
  • With a wire whisk, beat egg white and water in a large bowl until frothy. Stir in granulated sugar, brown sugar, pumpkin pie spice and salt. Stir in cooled almonds. Spread almonds in a single layer in prepared pan.
  • Bake approximately 20 minutes or until almonds appear dry, stirring once halfway through baking.
  • Transfer nuts to waxed paper, separating almonds into individual pieces; cool completely.
  • Place almonds in air tight decorative container for gift giving or air tight containers for storage in refrigerator. Store in refrigerator up to 1 week. Makes 5-1/2 cups.

    Hi, sadly, I’m allergic to egg whites…is there something I could use instead to help secure the spices to the nuts? These sound so wonderful but I would end up at the ER 🙁 do you think if I lightly coated them with EVOO that would work or would that make them too greasy? Thanks!
