The perfect summer barbecue side dish?  This Homemade Potato Salad!  Easy to make and packed with flavor.

For our recent July 4th (and in celebrating my hubby’s birthday), we grilled out Filet Mignon.  Me oh my was it good! We decided for a side of potato salad rather than a baked potato.  It’s been awhile since I made this dish, but every single time I do — there’s no regret.

I even asked my husband if he was okay with homemade potato salad over a ho-hum baked potato.  He said, “Uhh, yeah.  You make a really good potato salad.”  I giggled and replied, “I do?”

It’s been that long, folks.  So, I whipped up some potato salad that didn’t last more than a couple of days around our house.

Gosh, does food ever take you on a walk down memory lane?  It seems to do that for me a lot.  This particular dish reminds me of summer family trips to one of our favorite amusement parks.

My mom used to make this potato salad, along with fried chicken and an extraordinary brownie dessert when we took family trips to Darien Lake in upstate New York.  Sometimes I think we all got as equally excited about the picnic lunch as we did the rides and games of amusement park.  Such fantastic childhood memories.

Delicious and Easy Homemade Potato Salad with livelaughrowe.comI hope you enjoy this recipe as much as I have throughout the years.  It is super easy and delicious!  You just can’t beat those two combinations, can you?

Thank you, thank you, thank you for using dill pickle juice. I have been using this for
years and when people ask for my recipe and read dill pickle juice, they think I’m nuts. They thought it was good enough to ask for the recipe, go figure. Either I’m in good company or we’re both —-. Thank you for this recipe. Trish

I make so many different potato salads but this one is very similar to my “standard.” It’s the one my husband requests about once a week!

I use red salad potatoes and after they cool, I chop them, skin on, and drizzle on Zesty Italian dressing, let the spuds marinate for a bit, then do the same as you. Winner every time.

This is pretty much how I make mine, except I’ve never tried the dill pickle juice. I’ll have to try that! A lot of people make their’s sweet, but I like it this way. 🙂 Yummy!
