This Flakie Saltine Cracker Dessert is a Canadian no-bake recipe layered with vanilla pudding, cool whip, raspberry jam, and saltine crackers. Inspired by flavors found in Canada’s beloved Vachon Flakie snack cakes, this simple dessert has become a favorite in our home.

If you’ve been around here for any length of time, you know that my husband, Steve, is from Canada. He was born and raised in St. John’s, Newfoundland, and over the years I’ve been introduced to all kinds of Canadian foods and treats that were completely new to me. Like Ketchup Chips, which were surprisingly good and Fudgee-O Cookies that are a chocoloate lovers dream.
I digress. Haha. One of his longtime favorites is the Vachon Flakie—a flaky pastry filled with sweet raspberry filling that’s been a beloved snack in Canada for generations.
I still remember the first time I tried one. Steve was excited for me to taste a snack he grew up enjoying, and after one bite, I understood why. It was soooo good. The combination of flaky pastry and a delicious creamy filling was simple, yet incredibly delicious. Whenever we visit Canada, a couple of boxes always have to come back with us.
Nevertheless, while this Flakie Saltine Cracker Dessert isn’t a copycat recipe, it was inspired by those same delicious flavors. Thank you, Jeannette, for sharing this magical recipe with me.
With multiple layers of flavor, this no-bake dessert comes together with simple pantry ingredients and a little time in the refrigerator. The crackers soften as the dessert chills, creating a cake-like texture that is absolutely irresistible.
Whether you’re looking for an easy make-ahead dessert, a potluck favorite, or simply something a little different, this Saltine Cracker Dessert is worth adding to your recipe collection.

There are so many reasons to love this simple dessert recipe.
- No baking required
- Made with everyday ingredients

One of my favorite things about this recipe is how humble the ingredients are. Saltine crackers may seem like an unusual dessert ingredient, but they transform beautifully after chilling overnight.
The Story Behind This Flakie Inspired Dessert
Over the years, Steve has shared stories about growing up in Newfoundland, including favorite foods that remind him of home (Fish and Chips). Some recipes are tied to family traditions, while others are simple treats picked up from local bakeries and grocery stores.
The Vachon Flakie falls into that second category.
This Flakie Saltine Cracker Dessert captures some of those same flavors in an easy, family-style dessert. Instead of pastry, layers of saltine crackers soften into a tender texture while the raspberry jam and creamy pudding create a delicious combination.
It’s one of those desserts that doesn’t look fancy, but after the first bite, everyone asks for the recipe.

Step 4: Add the Raspberry Jam Layer
