Inspired by a beloved Canadian treat, this Flakie Saltine Cracker Dessert features layers of vanilla pudding, raspberry jam, saltine crackers, and Cool Whip. It's an easy make-ahead dessert that's perfect for potlucks, holidays, and family gatherings.
1boxSaltine Crackers, salted or unsalted16 oz. box
1jarSeedless Raspberry Jam (10.5 oz.)Sugar Free is suggested.
2cupsCool Whip, light or regular
Instructions
Line the bottom of a 9x13-inch baking dish with a layer of saltine crackers.
Spread half of the prepared vanilla pudding over the crackers.
Add another layer of crackers, then spread half of the Cool Whip over the top
Add a third layer of crackers and spread the raspberry jam evenly over the crackers.
Add another layer of crackers, then spread the remaining pudding over the top.
Add a final layer of crackers and spread the remaining Cool Whip evenly over the dessert.
Sprinkle the top with cracker crumbs.
Cover and refrigerate for at least 8 hours, or overnight, to allow the crackers to soften.
Slice and serve chilled.
Notes
The magic happens while the dessert chills. Overnight refrigeration allows the crackers to soften and creates the signature cake-like texture that makes this dessert so special.
The original family recipe calls for one 310 ml bottle of raspberry jam. Since I typically buy an 18-ounce jar of raspberry jam, I use about half of the jar, which is very close to the amount called for in the original recipe. Feel free to adjust the amount slightly to suit your taste.
This recipe can easily be halved and prepared in an 8x8-inch or 9x9-inch baking dish. Simply reduce all ingredients by half and layer as directed.
