This Peppermint Cookie Bark might just be the sweet treat that hits the spot this holiday season! Chocolate and peppermint with a crunch is a perfectly festive treat!
I think holiday baking might be at the top of my favorites when it comes to this time of the year. Some of the best cookie recipes, desserts and/or cakes that make my taste buds do a happy dance are prepared in December. Whether it’s for the family or gifts for neighbors and friends, something sweet always seems to make everything a little bit brighter – right? {hee-hee}.
I’m always happy to find a dessert that doesn’t require hours of prep and labor (yes, I’m exaggerating a bit, but you know what I mean). Well, guess what? This Peppermint Cookie Bark is the golden ticket to easy holiday treats! Why? Well, you’ll see….
Peppermint Cookie Bark
Ingredients
- 1 cup butter
- 1 cup sugar
- 1-2 sleeves saltine crackers
- 1 package semi-sweet mini morsel chocolate chips
- Crushed Candy Canes or Starlite candies
Instructions
- Set oven to 275 degrees.
- Line jelly roll pan with foil and spray with Pam.
- Lay out crackers, covering pan.
- Melt butter and sugar together in sauce pan until bubbles form.
- Pour mixture on crackers and bake for 10 minutes in oven.
- Remove from oven and sprinkle with chocolate chips.
- Place back in over for 1-2 minutes to assist with melting.
- Spread chocolate around with spatula and top with crushed candy canes (or festive decor/toppings of choice).
- Put in refrigerator until hardened.
- Crack into 4" pieces
For this recipe, you’ll simply use the caramel and chopped pecans instead of the crushed candy canes! I drizzled the caramel over the pan after it was chilled — and on the plate for eating (nomnom).

We use brown sugar…you didn’t specify sugar type on your recipe so I wondered if you used something different?
