Chocolate and coconut are quite delicious when combined! I often forget that {shame-shame}. However, when I do, it’s like a reunion of flavors for my tastebuds. Not too long ago, my sister brought some cookies by the house that were given to her as a birthday gift from a co-worker. A cookie I had never had before — German Chocolate Thumbprint Cookies.
German Chocolate Thumbprint Cookies
The hubby and I were both practically drooling. I remember my sister saying, “See, I told you they were good.” Today’s recipe is from my sister’s co-worker, Rita. We liked them so much, we asked her to make some more — and I just went ahead and photographed them before they disappeared.
A delicious and chewy cookie with a coconut and pecan topping! Enjoy.
German Chocolate Thumbprint Cookies
Ingredients
Cookies
- 1 German Chocolate Cake Mix
- 2 Tbsp. Real Butter
Topping
- 1 cup sugar
- 1 cup evaporated milk
- 1/2 cup butter
- 1 tsp. vanilla
- 3 egg yolks
- 1 1/2 cups flaked coconut
- 1 1/2 cup chopped pecans
Instructions
- Preheat oven to 350 degrees
- In heavy saucepan (2 quart), combine sugar, evaporated milk, stick of butter, vanilla and egg yolks. Blend well. Slowly heat up until butter is melted. Cook over medium heat for about 10 minutes or until thickened and bubbly, stirring constantly. Stir in coconut and pecans. Remove from heat.
- Reserve 1 1/4 cups of topping (set aside). Add 2 Tbsp.butter to remaining warm topping. Stir until butter is melted. Add dry Pillsbury Plus German Chocolate cake mix until thoroughly moistened.
- Shape dough into 1" balls. Place 2" apart on ungreased cookie sheet.
- Make indention in the center of each ball with your thumb. Fill each with reserved topping.
- Bake at 350 for 13 minutes. Do not over bake. Use wax paper between layers of cookies when storing.

These cookies are yummy. Yhe original recipe is from a Pillsbury bake off cookbook – Frances Sheppard of Texas submitted it. My mother had that cookbook and we would make them together. I now have the cookbook and love the memories when making them.
I saw you noted to not swap the cake mix but I have over the years and so far it has not altered the consistency of the cookie. Just the base flavor. I’ve used fudge cake mix for a richer chocolate cookie and they are equally yummy. It’s ok to experiment I guess is all I’m saying :-). Enjoy!
