Warm summer temps are still lingering; however,  most of the kiddos are headed back to school.  How about whipping up a frozen treat for an after school snack?  Or treat yourself to a frozen snack, I’m sure you deserve a break!  We all do at some point {wink}.

 A delicious frozen treat coming right up! Frozen Chocolate-Peanut Butter Banana-Cookie Bites. Weight Watchers friendly too, coming in at only 2 points per serving. Recipe at livelaughrowe.com I love peanut butter!  I’m probably a bit of an addict.  Wether it’s enjoying peanut butter in my chocolate ice cream, on a sandwich or simply licking it by the spoonful, peanut butter and I go way back.  You can imagine my excitement when I saw this Weight Watchers recipe with a frozen spin, it was a no brainer!  It’s a perfectly flavorful and refreshing!  I hope you enjoy these as much as I do.

Frozen Chocolate-Peanut Butter Banana-Cookie Bites

Servings: 15 servings

Prevent your screen from going to sleep

Ingredients

  • 2 tbsp. creamy peanut butter Jif is my go-to peanut butter
  • 1/2 cup prepared chocolate pudding with skim milk
  • 30 reduced-fat vanilla wafers
  • 1 large ripe banana cut into 15 slices

Instructions

  • Stir peanut butter into pudding until thoroughly combined.
  • Spoon 1 teaspoon pudding mixture on flat side on each of the 15 cookies.
  • Top each with 1 slice of banana and an additional teaspoon of pudding.
  • Top with remaining cookies, flat side down.
  • Store in airtight container and freeze until firm.
  • Serve or store up to 2 weeks.
