Easy Meal Prep Lunch Ideas for the Week

If lunchtime tends to sneak up on you, having a few easy meal prep lunch ideas ready to go can make the week feel a whole lot easier. A little prep ahead of time means fewer last-minute decisions, less temptation to grab something random, and—perhaps most importantly—a good lunch waiting in the refrigerator when hunger strikes.

Today I’m sharing two meal prep lunches I’ve made and enjoyed: a simple Taco Salad Meal Prep that’s easy to customize and a delicious Korean Beef Bowl Meal Prep from Damn Delicious.

They’re completely different flavor-wise, which is one of the things I like about them. Meal prep definitely doesn’t have to mean eating the same boring chicken and vegetables five days in a row. Amen?

Why Meal Prep Lunch Ideas Are Worth the Effort

I’ll be the first to admit that meal prep can sound a little more ambitious than it actually is.

You don’t need to spend your entire Sunday cooking a week’s worth of food or fill the refrigerator with dozens of perfectly organized containers. Even preparing two or three lunches ahead of time can make a big difference.

For me, the appeal is pretty simple: when lunch is already made, I actually eat a real meal instead of standing in front of the refrigerator trying to figure out what sounds good.

A few containers, some basic ingredients, and about an hour in the kitchen can save quite a bit of time throughout the week.

Plus, both of these meals include plenty of flavor and texture—which is a must in my book.

Two Easy Meal Prep Lunch Ideas

For this particular meal prep session, I went with two very different meals.

The first is a Taco Salad Meal Prep Bowl, filled with seasoned meat, rice, crisp lettuce, and taco toppings.

The second is a Korean Beef Bowl Meal Prep featuring flavorful beef, rice, spinach, and hard-boiled eggs.

One is fresh and taco-inspired, while the other is warm, savory, and incredibly satisfying.

And both hold up nicely for make-ahead lunches.

I suppose that’s what happens when you’ve been blogging for a while—there are always a few things hiding in the archives. Thankfully, easy meal prep lunches are pretty timeless, so I’m finally giving these photos their moment…. and our sweet Buster was close by during this photo shoot, I couldn’t help but capture a picture of my good boy, drooling over the food sitting in front of him.

Easy Grab-and-Go Lunch: Taco Salad Meal Prep Bowls

Taco salad has always seemed like one of those meals that was practically made for meal prep.

You can prepare the individual ingredients ahead of time, portion everything into containers, and then toss it all together when you’re ready to eat.

My version includes seasoned ground meat, rice, lettuce, and a few favorite taco toppings.

Nothing complicated. Nothing fancy.

Just a really good lunch.

Keep the Ingredients Separate

The biggest trick when preparing taco salad in advance is keeping the wet ingredients away from the lettuce.

Because nobody wants sad, soggy lettuce waiting for them on Wednesday afternoon.

If your meal prep containers have divided sections, they’re perfect for this. Otherwise, small condiment containers work wonderfully for things like salsa, sour cream, dressing, or other toppings.

Keep the lettuce dry and separate until you’re ready to eat.

Then simply heat the meat and rice portion, add the lettuce and toppings, and give everything a good toss.

Easy peasy.

Easy Taco Salad Ingredients

One of the best things about taco salad is how flexible it is.

Start with the basics:

Seasoned ground beef or turkey, cooked rice, shredded lettuce, cheese, salsa or tomatoes, and sour cream or Greek yogurt.

From there, add whatever sounds good.

Black beans, corn, avocado, jalapeños, cilantro, green onions, crushed tortilla chips, or a squeeze of fresh lime would all be delicious additions.

You could even skip the rice and add extra lettuce if you’d prefer something lighter.

That’s what makes this such a handy meal prep recipe—you can easily adjust it based on what you already have in the refrigerator.

Taco Salad Variations

Another reason taco salad works so well for meal prep is that you can change it up from week to week without reinventing the entire meal.

Use ground turkey instead of beef.

Swap brown rice for white rice.

Add black beans for extra protein and fiber.

Use romaine, iceberg, or a combination of greens.

Want a little crunch? Toss in tortilla strips right before serving.

And if you’re someone who loves a little heat, add jalapeños or your favorite hot sauce.

There really aren’t many rules here.

Korean Beef Bowl

For my second meal prep option, I made the Korean Beef Bowl Meal Prep from Damn Delicious.

What caught my attention about this one was the combination of savory Korean-inspired ground beef, rice, spinach, and hard-boiled eggs.

It’s hearty without feeling overly heavy, and everything works surprisingly well together.

It also reheats nicely, which is obviously a pretty important requirement when we’re talking about meal prep lunches.

The beef has plenty of flavor, while the spinach and egg make the meal feel a little more substantial and balanced.

And once everything gets mixed together? So good.

How Long Do Prepped Lunches Last in the Refrigerator?

Most cooked meal prep lunches are best enjoyed within about three to four days when stored properly in the refrigerator.

I usually keep that in mind when deciding how many containers to prepare.

If you’re making lunches for an entire five-day workweek, you may prefer to prepare another batch midweek or freeze anything that freezes well.

For taco salad specifically, keeping the lettuce and toppings separate helps everything stay fresher.

Store the cooked meat and rice together if you’d like, then keep your cold ingredients in another section or container.

My Favorite Way to Reheat

For meals with both hot and cold ingredients, I don’t heat the entire container.

Instead, I warm the meat and rice portion first and then add the lettuce and cold toppings afterward.

For the Korean beef bowls, remove anything you don’t want warmed before reheating.

A minute or two in the microwave is usually all it takes, depending on the portion size and your microwave.

Give everything a stir before eating so the heat distributes evenly.

A Few Meal Prep Tips That Make Things Easier

  • You don’t need an elaborate meal prep system to make this work.
  • A few simple habits help quite a bit.
  • Choose recipes that share ingredients whenever possible. Rice, greens, eggs, and ground meat can easily work across several different meals.
  • Prep ingredients assembly-line style rather than making one container at a time.
  • Let cooked foods cool slightly before sealing them in containers to help prevent excess condensation.
  • And don’t forget about texture. Adding something crisp or fresh right before eating can make a reheated meal feel much more appealing. That’s one reason I like keeping toppings separate.

Easy Taco Salad Meal Prep Bowls

These easy meal prep lunch ideas are simple, flavorful, and perfect for busy weeks, with taco salad bowls and Korean beef meal prep.
Course: Main Course
Servings: 4

Equipment

  • Meal Prep Containers
  • 2 oz. Condiment Containers

Ingredients

  • 1 lb ground beef or ground turkey
  • 1 packet taco seasoning
  • 2/3 cup uncooked brown rice, prepared according to package directions (about 2 cups cooked)
  • 6-7 cups Romaine lettuce, chopped
  • Shredded cheddar cheese
  • Sour cream
  • Salsa

Instructions

  • Cook the ground beef or turkey in a skillet over medium heat, breaking it apart as it cooks.
  • Drain any excess grease, then prepare the meat with the taco seasoning according to the package directions.
  • Allow the meat to cool slightly.
  • Divide seasoned taco meat among four meal prep containers.
  • Divide the cooked rice evenly among four meal prep containers, adding 1/2 cup cooked rice to each container.
  • Divide the chopped romaine lettuce among four sandwich bags and place in meal prep containers.
  • Add shredded cheddar cheese to each container.
  • Fill separate 2-ounce condiment containers with sour cream, shredded cheddar cheese, and salsa. Place them with each meal.
  • Refrigerate until ready to serve.

I think meal prep sometimes gets a reputation for being an all-or-nothing project.

But it doesn’t have to be.

You don’t have to prepare breakfast, lunch, dinner, snacks, and perfectly portioned containers for an entire week.

Start with lunch.

Make two or three meals.

See what works.

Even having a couple of homemade lunches waiting in the refrigerator can make a busy week feel a little more manageable.

And these easy meal prep lunch ideas are a great place to start.
