Why is food such a comfort to me?  I eat it when I’m happy, when I’m sad and, well, too much.  {giggle}.  Food is also something that can easily trigger memories, right?  Some good and some bad, I presume.

Unfortunately, I lost both of my grandmothers a few years ago within a couple of weeks.  It was horrible.  They were both amazing women — and cooks.  You would never be disappointed by what was set on the table at grandma’s.  One of my absolute favorites from my Grandma Voorhees (my mom’s mom) was her Pizza Bread.  I need to share that with you at some point too.  Yummy!  It’s also incredibly easy, delicious and uses the same ingredients!

Anywho, I thought it would be fun to put a spin on my grandmother’s recipe and share this yummy goodness with all of you! I love the punch of flavor the Mezzetta products add to this sandwich too.  Mezzetta has been a staple in our pantry for years.  I could eat a jar of Roasted Red Peppers every day {hee-hee}.

Pizza Panini Recipe

Prevent your screen from going to sleep

Ingredients

  • 1/2 cup Mezzetta Roasted Bell Peppers
  • 1/2 cup Mezzetta Deli-Sliced Mild Pepper Rings
  • Extra Virgin Olive Oil
  • 1 cup Shredded Mozzarella Cheese
  • 20 pieces of Sliced Pepperoni
  • 4 slices of 1/4" sliced sourdough bread

Instructions

  • Preheat panini press.
  • Spread olive oil on one side of each slice of bread.
  • Place 3-4 slices of bread, oil down, on the panini press.
  • Place 1/8 cup of mozzarella cheese, 4-5 slices of pepperoni, 2 tablespoons Mezzetta Roasted Red Peppers, 2 tablespoons of Mezzetta Deli Sliced Mild Pepper Rings, another 1/8 cup of mozzarella cheese on each slice of bread.
  • Cover with remaining 3-4 slices of bread, olive side up.
  • Close panini press and cook 3-4 minutes or until desired brownness.
