The perfect summer barbecue side dish? This Homemade Potato Salad! Easy to make and packed with flavor.
For our recent July 4th (and in celebrating my hubby’s birthday), we grilled out Filet Mignon. Me oh my was it good! We decided for a side of potato salad rather than a baked potato. It’s been awhile since I made this dish, but every single time I do — there’s no regret.
I even asked my husband if he was okay with homemade potato salad over a ho-hum baked potato. He said, “Uhh, yeah. You make a really good potato salad.” I giggled and replied, “I do?”
It’s been that long, folks. So, I whipped up some potato salad that didn’t last more than a couple of days around our house.
Homemade Potato Salad
Gosh, does food ever take you on a walk down memory lane? It seems to do that for me a lot. This particular dish reminds me of summer family trips to one of our favorite amusement parks.
My mom used to make this potato salad, along with fried chicken and an extraordinary brownie dessert when we took family trips to Darien Lake in upstate New York. Sometimes I think we all got as equally excited about the picnic lunch as we did the rides and games of amusement park. Such fantastic childhood memories.
I hope you enjoy this recipe as much as I have throughout the years. It is super easy and delicious! You just can’t beat those two combinations, can you?
Homemade Potato Salad
Ingredients
- 5 lb. bag of potatoes
- 5 stalks of celery
- 1/2 dozen eggs
- Mayonnaise
- Salt and Pepper
- Dill Pickle Juice optional
- Paprika
Instructions
- Boil 5 lb. bag of potatoes (whole, with skin on) until fork tender.
- Let the potatoes cool. Peel and cut into small pieces, cubed.
- Boil 1/2 dozen eggs and use 4-5 in salad. Save the others for the top.
- Add mayonnaise and salt and pepper to taste.
- Add dill pickle juice to taste (optional).
- After everything is mixed, slice eggs on top and sprinkle with paprika.

I use red salad potatoes and after they cool, I chop them, skin on, and drizzle on Zesty Italian dressing, let the spuds marinate for a bit, then do the same as you. Winner every time.
