There’s just something about a cold, fruity drink on a hot summer day, isn’t there? This Summer Peach Cocktail is light, refreshing, and full of fresh seasonal flavor. Made with juicy peaches, lemon, honey, fresh thyme, and your choice of gin or vodka, it’s an easy cocktail that feels a little special without being complicated.

The homemade peach-thyme syrup gives this drink its fresh fruit flavor, while soda water adds plenty of bubbly goodness. It’s the kind of cocktail that works beautifully for a backyard gathering, summer dinner, girls’ night, or a quiet evening on the patio.

And if peaches are at their peak where you live, even better.

Why You’ll Love This Summer Peach Cocktail

Fresh peaches are one of my favorite things about summer, and this drink is such a fun way to enjoy them.

It’s fruity without being overly sweet, and the fresh thyme adds just enough herbal flavor to make it interesting. Lemon brightens everything up, while the soda water keeps the drink crisp and refreshing.

Another bonus? You can make this peach cocktail with either gin or vodka, depending on what you enjoy or already have on hand.

Gin brings a little more botanical flavor to the cocktail and pairs especially well with the thyme. Vodka is more neutral, allowing the peach flavor to take center stage. Either way, you really can’t go wrong.

Fresh Peach and Thyme Spritzer Ingredients

One of the things I love about this Summer Peach Cocktail is the simple ingredient list.

You’ll need:

  • Fresh peaches
  • Fresh lemon juice
  • Fresh thyme
  • Honey
  • Water
  • Gin or vodka
  • Soda water
  • Ice

Fresh peaches are definitely the star of the show here, so use ripe, flavorful peaches whenever possible.

You’ll use two peaches to make the homemade syrup and can use an additional peach for slicing and garnishing the glasses.

How to Make Peach Thyme Syrup

The homemade peach syrup is what gives this cocktail so much flavor.

Start by dicing two fresh peaches and adding them to a saucepan with water, honey, and several sprigs of fresh thyme.

Bring the mixture to a boil and cook until the peaches begin to soften and release their juices.

Once the peaches are soft, remove the saucepan from the heat and allow everything to cool slightly.

Strain the mixture, reserving the flavorful peach-thyme syrup. You can discard the thyme and save the softened peaches for another use if you’d like. They would be delicious spooned over yogurt, oatmeal, pancakes, or even vanilla ice cream.

Place the syrup in the refrigerator and let it chill for approximately one hour.

Chilling the syrup is important because nobody wants warm peach syrup melting all the ice in their cocktail. Ha!

How to Make a Summer Peach Cocktail

Once the peach syrup is chilled, putting the cocktail together couldn’t be much easier.

Fill a large pitcher with ice, then add the chilled peach syrup, gin or vodka, fresh lemon juice, and soda water.

Give everything a gentle stir until combined.

Pour the peach and thyme spritzer into glasses filled with ice and garnish with a fresh peach slice and a sprig of thyme.

Pretty and refreshing.

What more could we ask for?

Gin or Vodka for a Peach Cocktail?

This recipe works well with either spirit, so choose whichever one you prefer.

If you use gin, the botanical flavors complement the fresh thyme and give the cocktail a slightly more complex flavor.

If you prefer a cleaner and more straightforward peach flavor, go with vodka. Vodka allows the peach, honey, and lemon flavors to shine without adding much additional flavor of its own.

If I were serving a group and wasn’t sure what everyone preferred, I’d probably use vodka. It tends to be a little more universally appealing.

But for anyone who enjoys gin, the peach-thyme combination is especially delicious.

Tips for the Best Summer Peach Cocktail

Ripe peaches make a big difference in this recipe. Look for peaches that smell fragrant and give slightly when gently pressed.

If the peaches are very firm, let them sit on the counter for a day or two before making the cocktail.

Fresh lemon juice is also worth using here rather than bottled lemon juice. Since the recipe contains only a handful of ingredients, those fresh flavors really stand out.

And don’t skip the garnish.

A few fresh peach slices and thyme sprigs instantly make this simple cocktail feel much more festive.

You know I’m always a fan of making food and drinks look pretty without creating a whole lot of extra work.

Can I Make This Peach Cocktail Ahead of Time?

Part of this recipe can definitely be prepared ahead.

The peach-thyme syrup is actually perfect for making in advance. Prepare it earlier in the day or even the day before, then store it covered in the refrigerator until you’re ready to make your cocktails.

I would wait to add the soda water until shortly before serving so it stays nice and bubbly.

You can also slice your peach garnishes ahead of time and keep them refrigerated. Tossing them with just a little lemon juice can help prevent them from browning.

A Refreshing Cocktail for Summer Entertaining

This Summer Peach Cocktail would be especially pretty served at a summer brunch, backyard barbecue, bridal shower, pool party, or casual dinner with friends.

You could even set out a little garnish station with peach slices, thyme sprigs, and lemon wedges so guests can dress up their own glasses.

Serve it alongside light summer foods such as grilled chicken, salads, fresh fruit, cheese boards, or appetizers.

And because the cocktail is bubbly and not overly heavy, it’s especially refreshing when the temperatures start climbing.

Summer Peach Cocktail Recipe

Ingredients

  • 2 fresh peaches, diced
  • 1 additional peach, sliced for garnish
  • Juice of 1 lemon
  • 8 sprigs fresh thyme, divided
  • 2 tbsp honey
  • 1/2 cup water
  • 8 oz gin or vodka
  • 12 oz club soda, chilled
  • Ice

Instructions

  • Add the diced peaches, water, honey, and 4 sprigs of thyme to a small saucepan.
  • Bring the mixture to a gentle boil and cook until the peaches soften.
  • Remove from heat and allow the mixture to cool slightly.
  • Strain the mixture through a fine-mesh strainer, reserving the peach-thyme syrup.
  • Refrigerate the syrup for approximately 1 hour or until chilled.
  • Fill a large pitcher with ice.
  • Add the gin or vodka, soda water, fresh lemon juice, and chilled peach syrup.
  • Stir gently to combine.
  • Pour over ice and garnish with fresh peach slices and thyme sprigs.
