Tis the season… for all things pumpkin!
Whose with me? I love fall for the
all the yummy pumpkin goodness
that comes with it.
Today, I thought we might enjoy some
breakfast together with Pumpkin Oatmeal.
I had my first Pumpkin Spice Latte recently — I had to wait until it was cool enough enjoy it! However, I also recently learned that you can have a Pumpkin Spice Frappuccino. What the wha? Perfect on those warmer days, friends {wink}. Anywho, I’ve share a couple of pumpkin recipes in the past: Pumpkin dump Cake and Pumpkin Whip. I’m excited to bring a morning dish your way! I mean, a veggie serving first thing in the morning is perfection, right?
This Pumpkin Oatmeal recipe is another one where I substituted some of the milk with a tasty International Delight creamer. It added the perfect amount of sweetness too! I wanted to give this a shot using their Pumpkin Spice creamer, but had no luck finding it, so I went with Sweet Cream. Let’s get cooking!
Pumpkin Oatmeal
Ingredients
- 1 cup quick-cooking rolled oats
- 1/2 cup Sweet Cream International Delight creamer
- 1/4 skim milk
- 1/2 cup canned pumpkin puree
- 1/4 teaspoon pumpkin pie spice
- Chopped walnuts optional
Instructions
- Mix together oats, creamer and milk in a microwave-safe bowl. Cook on high for 1 to 2 minutes. Add additional milk or oats, if necessary, to achieve desired consistency.
- Stir in pumpkin and pumpkin pie spice. Heat through.
- Sprinkle with chopped walnuts, optional.

This is ridiculously delicious, that I’m planning to make a double batch to have on-hand for the week!
