I have thee biggest sweet tooth. You should see it, it’s HUGE! {giggle}. I always like to end a meal with something sweet and I probably crave a few too many sweets throughout the day. So, when you’re trying to lose weight, it’s important to have options, right? Ummm, yes! Well, I did a little digging and found this super easy cookie recipe by Weight Watchers. I tend to be a little skeptical of a skinny and sweet recipes — the fear of the unknown, not sure if it’s going to fill that craving. Friends, I have some good news! These cookies fit the bill! Delicious-ness in every single bite! Easy White Chocolate Drop Cookies for the win.
Let’s sweeten your day with this cookie recipe that’s made with simple pantry ingredients you already have on hand!
Easy White Chocolate Drop Cookies
Ingredients
- 1/2 cup quick-cooking not instant oats
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 4 tablespoons unsalted butter melted and cooled
- 3/4 cup packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 4 ounces white chocolate cut into 1/4-inch pieces
Instructions
- Place oven racks in upper and lower thirds of oven and preheat oven to 350. Spray 2 large baking sheets with nonstick spray, if necessary.
- Put oats in blender and process until finely ground. Combine oats, flour, baking soda and salt in small bowl. With an electric mixer on low speed, beat butter, brown sugar, egg and vanilla in large bowl until well blended. Add flour mixture and beat until blended. Stir chocolate into dough.
- Drop dough by level tablespoonfuls onto baking sheets 2 inches apart. With glass dipped in flour, or with your fingers, press each mound to make 2-inch rounds. Bake until lightly browned along edges, 9-11 minutes, rotating baking sheets halfway through baking time. Let cool on baking sheets on wire racks about 1 minute. With spatula, transfer cookies to racks and cool completely
Notes
Add a few macadamia nuts (be sure to adjust your points accordingly) and you’ll have a yummy White Chocolate Macadamia Nut Drop Cookie. My sweet tooth is calling… gotta run!

I am going to try these next time I bake (i.e. soon!), I always run out of ideas for cookies, and I am not a fan of chocolate chip cookie. Not sure I’d call them “skinny”– a cookie is a cookie. Portion control would have to be turned on to the max with these for me, my sweet tooth is huge too.
