Ruby Tuesday (aka Happy Tuesday)! My family has been saying Ruby Tuesday for years — and I’m not sure I even know the reason why, but it makes me smile so I roll with it. Today, I’m sharing one my new all-time favorite snacks, the 3-2-1 Cake (which only has 2 points for Points Plus and 3 Smart Points, if you’re on Weight Watchers). I learned about this at a meeting. Nom nom nom!!
I have an enormous sweet tooth! I like to treat myself to dessert as often as possible too. So, finding something that is yummy and a on the skinnier side — well, that’s a win-win.
- 1 box Angel Food Cake
- 1 box Chocolate Cake (or flavor of choice)
- Mix the angel food cake and the chocolate cake together in a large storage bag or container.
- Add 3 tbsp powdered cake mixture to coffee mug.
- Add 2 tbsp of water.
- Mix water and cake mixture well.
- Microwave for 1 minute.
A low-fat, light and fluffy treat! I made a couple in glass mugs to give you an idea of how they’ll look. Add cool whip or ice cream too — it’s dee-licious!
