Well, as you might have guessed, I have a pumpkin recipe for you today: Maple Glazed Pumpkin Bites. Oh, pumpkin, how I love thee.
Maple Glazed Muffin Bites
You might have guessed by now that one of my favorite things about fall is eating and drinking all things pumpkin! It makes me so incredibly happy {hee-hee}.
How about you? Love pumpkin too? I know it’s either a take it or leave it food for a lot of people. Maybe you’re not a fan, but have some friends that are. Keep this recipe on-hand, it might come in handy one day!
These bite size muffins are great for a tea party, snack, breakfast or brunch! The maple glaze is amazing. Enjoy!
Maple Glazed Pumpkin Bites
Ingredients
For the Muffins
- 1/4 cup pure pumpkin
- 1/2 cup packed brown sugar
- 1/2 cup milk
- 1/3 cup vegetable oil
- 1 egg
- 1 teaspoon vanilla
- 1-3/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
For the Maple Glaze
- 2 tablespoons butter
- 1 cup powdered sugar
- 1 teaspoon vanilla
- 1 tablespoon maple syrup
- 1-2 tablespoons water
- Cinnamon Sugar optional
Instructions
For the Muffins
- Preheat oven to 350. Spray 25 mini muffin cups with nonstick cooking spray.
- Combine pumpkin, brown sugars, milk, oil, egg and vanilla in a large bowl; stir to blend. Add flour, baking powder, cinnamon, nutmeg and salt; stir until just combined. Scoop heaping tablespoons into prepared muffin cups.
- Bake 11-12 minutes or until toothpick inserted into centers comes out clean. Cool in pans 5 minutes. Remove to wire rack.
For the Glaze
- Melt butter in saucepan. Add powdered sugar and vanilla - it will most likely be thick.. Stir in maple syrup. Add water until desired consistency is reached.
- Dip tops of muffins into glaze and let stand until mixture is set.
- Sprinkle muffins with cinnamon-sugar mixture, optional.
Here’s the thing — if you’re not a huge pumpkin lover, you might like these. It has light pumpkin flavor, so I say give it a go. The maple glaze is a perfect compliment to these bite size yummies.
